What a mouthful. Literally.
To be honest, this isn’t the cupcake I had envisioned making. But, it sprung about from an order that I had over the weekend, and was the result of a little ingenuity.
And guess what?
It’s delicious.
I mean THINK about it. Nutella. Chocolate. Sugar. Bananas. They’re heaven. Why not combine it all?![]()
Caramelized Banana & Nutella Cupcakes
makes 24
- One Recipe Devils Food Cake (or a box, if you prefer)
- 2 Bananas (one chopped, one sliced)
- 1 cup Nutella
- Sugar, for sprinkling on the sliced bananas
- 1 Recipe Whipped Marshmallow Frosting (see below)
Assembly:
Remove a cone of cake from the center of each cupcake. Fill with a few little pieces of chopped banana and Nutella. (no need to replace the cone.) Top with piped frosting. (You can spoon it on if you don’t have a piping bag.)
Sprinkle a little sugar on each banana slice (one for each cupcake). Using a kitchen torch, caramelize the sugar on the bananas. Place a slice on each cupcake, then torch the frosting as well. Garnish with a chocolate swirl if desired. Enjoy!
Whipped Marshmallow Frosting
- 1 3/4 cups sugar
- 1/4 cup water
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 2 teaspoons vanilla extract
In a heatproof bowl, combine the sugar, water, egg whites and cream of tartar. Beat for 2 minutes with a hand mixer. Place the bowl over a pot of simmering water, and continue to beat on high speed for roughly 12 minutes, or until stiff peaks form.
Remove from heat and stir in the vanilla, then mix again for 2 minutes. Place in refrigerator to cool at least 30 minutes.
As of today, I am off to New York where I will meet up with some friends… (Think Jenny, Maria, Amanda)and I’m sure I will be sampling WAY too many goodies with those ladies that will inspire me to create some recipes here to share with you…anything you really want to see? Is there a bakery in the city we just HAVE to try? I can eat as many cupcakes as I want while I am gone, as this Friday is my birthday…and everyone knows that calories don’t count when it’s your birthday week. I’ll be there until Thursday – so throw me your suggestions!

These look fantastic and I’d like to make them for my bosses birthday next week, but being a broke college student, is there any way i can carmelize the bananas without a torch? I’ve toasted marshmallow frosting by popping them back in the oven, but will that give me the right effect on the bananas?
