Blackberry POM Piña Coladas

I love easy things. Life is hard enough without having to come up with complicated things to drink. Especially on hot summer days when you JUST WANT TO GET WASTED RELAX.

So, at a recent dinner party we had here at the house, I threw together (literally, in a rush, I threw this drink together) in about 5 minutes.

I like to call it the POMiña Berry Colada, but POMiña looks funny when written out. And it’s surprisingly hard to remember. I don’t know why…I don’t make the rules. But you know what it IS?

Rum or not, you’ll find this drink full of flavor and the perfect blend of sweet and tangy. The tang comes from the use of POMs new POM Lite with Blackberries. I was fortunate enough to meet the POM folks at BlogHer Food back in May, and they kindly sent me a case of this lightened up Pomegranate juice. They have a few new Lite flavors: POM Blackberry, POM Currant, and POM Dragonfruit (yummmm) are three of my favorites. Now, don’t misinterpret the Lite – it doesn’t mean zero calorie Diet. It means lightened up Pomegranate Juice…which, as you know, is some pretty strong stuff. These Lite versions you can just knock back and drink in the all-natural goodness. (I sound like an infomercial, don’t I? Sorry. I’m not getting paid to write this post at all! I just love it!)

Hopefully you will give this recipe a shot, though I hesitate to even label it a recipe.

It should be more like a way of life.

Blackberry POM Piña Colada

makes 2 large glasses

  • 1 Bacardi Frozen Piña Colada Mixer
  • 1 Bottle Lite POM Blackberry Juice, slightly frozen in bottle
  • 1/2 cup Coconut Rum (If desired, omit if preferred)

Place the POM bottle in the freezer for 1-2 hours, until mostly frozen. Bang it around after taking it out of the freezer, to loosen up the ice enough to get it out of the bottle. If it’s too solid, you’ll have to bang it hard, and maybe even use a knife to cut the bottle open. Just keep an eye on it…it freezes pretty quickly.

Once the POM is out of the bottle, put it in the blender and chop it up. Add in the rum and the Bacardi Piña Colada Mixer, and blend until smooth. Garnish with blackberries, if desired…and enjoy!
