Roasted Potatoes with Tomatoes and Basil…and an AMAZING Giveaway!

Not every dish must be a Main Dish.

But…every dish should be a Great Dish.

This recipe for Roasted Potatoes is so fresh and flavorful, it would be the perfect side to chicken, pork, or beef.  The addition of the garden tomatoes offers a real kick that counterbalances the starchy potatoes, and the herbs? Well, any time you can use fresh herbs you really should – what a treat!potatoes-3

Our garden has been teeming with the most wonderful herbs and tomato plants this year, thanks in part to Burpee Home Gardens who kindly offered a few ready to go plants.  In this dish we used some really ripe Fourth of July Tomatoes, and a few Romas…great combination.  But, you could easily use any red tomato that you have.  I don’t really recommend a store bought tomato here…they just aren’t as flavorful.  If you must, though…try Hot House or Vine Ripe.

Roasted Potatoes with Tomatoes & Basil

  • 2 1/2 pounds redskin potatoes, thick slicedpotatoes-1
  • 1 1/2 cups fresh tomatoes, chopped
  • 1/2 cup fresh basil, chiffonade
  • 3 tablespoons wet minced garlic
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons melted butter
  • 1 teaspoon minced onion
  • 2 tablespoons fresh rosemary, chopped
  • Salt & Pepper, to taste (add just before serving)

Preheat oven to 400F.  Prepare large baking dish with cooking spray.  Set aside.

In large mixing bowl, toss all ingredients together until evenly coated.  Bake for 20-30 minutes, turning every 10 minutes.  Remove when the potatoes are evenly tender.  Season with salt and pepper.

My pet peeve with my mandolin is the difficulty with adjusting the blades to the desired thickness.

My current mandoline doesn’t sit at an angle. Only flat. It makes it difficult to slice quickly.

I liked you on FB, posted on twitter and am posting here. I so want this mandoline! I have been looking for weeks for a good one that someone highly recommends. I have seen several on Amazon and all sites like SurLaTable, Williams Sonoma, etc. I’m so glad to finally get a recommendation from someone amazing. Only trouble is, being unemployed for a year, can’t quite afford it so entering to win is a big deal! Your sites awesome! Thanks to my niece Jessica for turning me onto it!
