Apple Pie Popovers

Remember when I made those Pumpkin Pie Mini Popovers? I do. And I remember something else about it, too.

Have I made an Apple Pie Popover?

Well, no, no I have not.

apple-pie-popovers-1Until now. You see, the mere thought of making Apple Pie Popovers intrigued me so that I could not bear to put it off. I refused to Google it – perhaps there are recipes already out there, but I didn’t want anything at all to influence me. I knew exactly what I wanted.

I wanted something so decadent, it should be dessert, but qualifies wholly as a breakfast. Something simple enough to pull off on a Saturday morning without any forethought, but tastes like you worked on it all week. Something full of cinnamon and spice, something to chew on, and something sweet and creamy to top it.

I succeeded.

These Apple Pie Popovers are hands down the favorite popover we’ve had in this house. Think French Toast, but less bready. Think Apple Danish, but a little less sweet. You’ll find these popovers smack dab in the middle.

I suggest trying them now, to get the hang of it. And then serve them up to visiting friends and family during the Thanksgiving holidays. You’ll knock their socks off!

Apple Pie Popovers

Ingredients

3 eggs
1 cup milk
1 cup All Purpose Flour
5 Tbsps sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger
pinch nutmeg
pinch salt
2 teaspoons vanilla
1/3 cup Quaker Oats
3 Tablespoons Butter
1 small apple, chopped

Instructions

Divide the butter into the cups of your Pop Over Pan. (If you don’t own one, you can use a muffin tin, but you will need to use all 12 cups. Just divide the butter up evenly) Place the pan in the oven for 3-5 minutes while you are making the batter.
In medium bowl, beat the eggs with the milk, vanilla, spices and sugar, then whisk in the flour and oats. Pour the batter into the butter filled cups, then evenly add a few apple pieces to each cup. Return to oven for 5 minutes, then reduce the temperature to 350 and continue to bake for another 20 minutes. Drizzle with Cream Cheese Glaze. Serve and enjoy!

Want to make that Cream Cheese Drizzle? Of course you do. These popovers ache for it. It’s a really simple recipe – just soften about 4 tablespoons butter, 4 ounces of cream cheese, a tablespoon of milk and 3/4 to acup of powdered sugar. You can use an electric mixer if you want, or a strong whisk, or an egg beater works great. Just get it nice and creamy, then drizzle it on top of each plate of popovers. Enjoy!
