Toasted Coconut and Browned Butter Chocolate Chip Cookies

Browned butter.

Should be illegal, but thankfully? It isn’t.

I’ve been using it in just about every cookie dough, and what started out as a basic chocolate chip cookie for me last week turned inspirational when I realized I still had a bit of toasted coconut.

Happy, happy day.

In went the coconut, out came delicious.

I can’t smell coconut without thinking of Bali. Back when I was a big traveler and not a Stay at Home Mom, I got to see a lot of the world. Bali was one stop on a month long Southeast Asian vacation, and wow, was it ever fantastic.

We sat out by the amazing pool, drinks in hand on the white sand beach, and every day an ice cream vendor would push by offering a cool refresher. I always, always got coconut.

It’s still my favorite ice cream flavor. Just the smell of coconut takes me back there, gradually getting sunburnt, shopping for knockoff Louis Vuitton in Kuta, dining everyday at the Hard Rock where we made friends with the waiter from Jakarta. It was perfection.

One day, we hired a taxi driver (he was married to one of the jewelry sales girls at our hotel) to take us around the island for the day. 10 hours, tolls, shows, woodworking and jewelry shops, volcanoes and an incredible lunch high in the mountains? $40. FORTY. We tipped him another $40, and the next day he invited us to his home, but we didn’t get to go. I regret that. He did pick us up and take us back to the airport for free though, and brought us 2 beautiful Balinese masks. They still hang in our stairwell.

Sorry – side tracked. Vacation memories do that to me.

Back to the cookies. Toasty and warm and full of intense buttery flavor. Great for dipping in milk, or sandwiching together with a big scoop of coconut ice cream.

Toasted Coconut and Browned Butter Chocolate Chip Cookies

Ingredients

12 Tablespoons Browned Butter (salted butter)
1/2 cup Dark Brown Sugar
1/2 cup Light Brown sugar
1/2 cup Sugar
2 large eggs
2 teaspoons Vanilla
2 cups All Purpose Flour
1/2 teaspoon Baking Soda
9 ounces chopped chocolate bars (I mixed Milk & Semi-sweet Scharffen-Berger)
1/2 cup toasted coconut flake
sea salt or fleur de sel for topping

Instructions

Once butter is browned and slightly cooled, add butter to sugars and mix well. Add the eggs and vanilla to the batter and mix thoroughly. Combine the dry ingredients in a separate bowl, then add to batter, beating only until combined.
Add chocolates and coconut to batter, then place mixing bowl in refrigerator for 15 minutes to cool a bit. Preheat oven to 325 while dough chills.
Place balls of dough on prepared cookie sheet (I highly recommend a SilPat for this), leaving tops quite jagged so that cookies get nice surfaces. Sprinkle with sea salt or fleur de sel. Bake for 15 minutes, or until just golden brown, for best results.
