If you’ve been following me for any length of time, you know I am a big fan of West Bend products…especially the Versatility Slow Cooker.

It’s a crockpot.  It’s a warmer.  It’s a griddle, for crying out loud.

It’s amazing.

I don’t have a link to the recipe because I found it somewhere years ago & now just make it however I want to, but I like making a stacked enchiladas in the crockpot. Create foil “handles” criss-crossed in the bottom & coming over the edge & then just start layering your enchilada ingredients in. Cook & enjoy.

Amp it up a little by adding 1/4 tsp of cinnamon and 1 tbsp of Tony Chacherie’s. Yummo!

We made italian beef for a church event all in slow cookers and it was a huge success… I don’t have a link since it was a recipe we received from one of the ladies at church.
