The best thing about Mexican restaurants?

The Queso Dip. Hands down. Now, my husband might argue it’s the margaritas, but he’d be wrong.

It’s the Queso.

Creamy, spicy, flavorful cheese. I honestly have no clue what kind of cheese it is…but it’s fantastic and even better paired with salty tortilla chips.

When we went to Charlotte a few weeks ago, we ate at a restaurant that offered a Queso Steak Dip, so, being intrigued, and starved from traveling, we HAD to try it.

Good gracious.

We practically fought over the bowl from which to lick the remaining drops of sunshine. I knew, then and there, that this was one recipe in need of recreating.

Recreate it I did. It’s possibly better than the original…and perfect for a party. Especially a tailgate, or – how about the National Championship game this Monday? Who are YOU rooting for? Do you care? Regardless…if there is a man in your house, go ahead and invite up a few more friends for the sheer reason that you’ll be able to gorge your face with this dip while everyone else is watching the game.

Not kidding.

Queso Steak Dip

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 3-4 cups / Serves 10+ as appetizer

Ingredients

16 ounces Queso Cheese Sauce (in most grocers refrigerated area)
1 tablespoon butter
6 ounce rib eye steak (or other cut is fine), diced
1 sweet onion, diced
1 green pepper, diced
2 teaspoons wet minced garlic
pinch chili powder
pinch salt
dash hot sauce (or more, to taste)
1 tomato, diced
1/2 bunch cilantro, chopped

Instructions

Remove queso from refrigerator and allow to soften a bit while preparing the remaining ingredients.
In a saute pan, melt butter and proceed to saute peppers and onions for 5-6 minutes over medium heat. Add the steak pieces and spices. Saute for 1-2 minutes.
Add hot sauce and queso sauce to the saute pan, stirring to combine all ingredients. Allow flavors to meld for about 3 minutes, over low heat.
When ready to serve, place into bowl and top with fresh tomatoes and cilantro. Enjoy!
