Birthday Cake Mini Popovers

I am getting a bit nuts in the Popover Project. Birthday Cake?  Well, my birthday is this Saturday, after all, and popovers seemed like a fun experiment.  Birthday Cake Popovers.

It was a success!

I went the funfetti route…lots of colorful sprinkles tossed in to make them exciting and celebratory. Because birthdays are for celebrating, right?

It used to be I was always celebrating while traveling on my birthday – one year it was Thailand, the next Kenya, then Greece, Italy, Egypt…I’ve been really lucky, seeing the world!  But now that we have Seven, it’s hard to find the money to travel for a month at a time. Oh, how I miss that!  However, there’s something to be said for staying home, enjoying family, and just being comfortable.

These popovers fit right in!

Birthday Cake Mini Popovers

Rating: 41

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 12 mini or 6 large popovers

Birthday Cake Mini Popovers

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1 cup All Purpose Flour
  • 1/3 cup sugar
  • 1 tablespoon melted butter
  • pinch salt
  • 2 teaspoons vanilla
  • 1/4 teaspoon LorAnn Buttery Dough Emulsion (if you have it)
  • 3 Tablespoons Butter
  • Multi Colored Jimmies or Sprinkles

Instructions

  1. Preheat oven to 375F. Divide the 3 tablespoons butter into the cups of your Pop Over Pan. (If you don’t own one, you can use a muffin tin, but you will need to use all 12 cups. Just divide the butter up evenly) Place the pan in the oven for 3-5 minutes while you are making the batter.
  2. In medium bowl, beat the eggs with the milk,melted butter, vanilla, flavoring (if you have it) and sugar, then whisk in the flour and jimmies/sprinkles. Pour the batter into the butter filled cups. Return to oven for 5 minutes, then reduce the temperature to 350 and continue to bake for another 20 minutes. Drizzle with your favorite syrup, and whipped cream and more sprinkles, if desired.. Serve and enjoy!

I bake when I’m stressed. Let me rephrase. I bake way too many cupcakes when I’m stressed. My family would be very happy if I won this pan and made something other than cupcakes!

I actually stumbled across this while looking for dates for car shows .I do not cook much but because for me it is boring but these cute ideas will have me experimenting alot !
