Avocado Love

avocadoShow of hands…who loves Avocados? Wow. That’s a lot of you. Growing up, we didn’t EVER have them. As in, EVER. Not once. It wasn’t until I moved out and went to college that I tasted guacamole, which has a weird, unattractive, unappetizing name. So it scared me. Not until I started food blogging did I discover my love for the avocado. It’s great sliced onto sandwiches, mushed into guacamole, or churned into ice cream. Yes, really. It can even win you a trip to the Rose Bowl, like I did last year. I entered a recipe for a Bourbon Bacon Shrimp and Avocado Pocket into a tailgating recipe contest, and three months later I was jetted off to Pasadena for 5 days of fun and football. Now, not everyone is going to win a trip, and that’s okay. Because everyone can still make and eat the recipes, and be happy campers. Here are a few avocado inspirations from my friends, as well as my Rose Bowl Winning recipe. I highly recommend each of them!
