For Bakerella: Pink Velvet Cake Popovers

Or should it be Cakepop Overs?

Either way…they are perfect for Valentine’s Day breakfast in bed, and every bit as cute and delicious as their namesake…Bakerella.

I emailed sweet Angie (the one and only Bakerella) a while back in order to involve her in my most unusual Popover creation to date. I gave her few guidelines – only that I wanted to create a CakePopOver in her honor, as she inspires SO many people.

Her request? Red Velvet, cream cheese, and sprinkles.

Wow.

Not a bad request for a cupcake, but a Popover? Could it even be done?

OhMyGodYes.

I did have to make one small change though. Bakerella strikes me as more Pink than Red. Doesn’t she you? Plus, Pink Velvet is more unique…much like she is. So Pink Velvet it is.

Pink Velvet Cake Popovers
Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 12 mini or 6 large popovers

Ingredients

3 Tablespoons butter
3 eggs
1/2 cup milk
1/2 cup buttermilk
red or pink food coloring, if desired
1/3 cup sugar
1 cup All Purpose Flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
Cream Cheese Icing
Sprinkles
Instructions

Preheat Oven to 375.
Divide the butter into the 12 cups of your Pop Over Pan (or muffin tin). Place the pan in the oven for 3-5 minutes while you are making the batter.
In medium bowl, beat the eggs with the milk, buttermilk, food coloring and sugar, then whisk in the flour, cocoa and salt. Mix in the vanilla. Pour the batter into the butter filled cups and return to oven for 5 minutes, then reduce the temperature to 350 and continue to bake for another 20 minutes. Top with cream cheese icing drizzle and sprinkles.
Notes

For the Cream Cheese Glaze: Soften about 4 tablespoons butter, 4 ounces of cream cheese, a tablespoon of milk and 3/4 to a cup of powdered sugar. You can use an electric mixer if you want, or a strong whisk, or an egg beater works great. Just get it nice and creamy, then drizzle it on top of each plate of popovers. Enjoy!

I actually made these over my birthday weekend, when my best friend Paula of Bell’Alimento completely surprised me by showing up! Before sending her back to North Carolina, I whipped up this batch and she graciously styled the shoot for me. (She took the above pic with her iPhone, too!) Cute, huh? In case you need a taste referral – just ask her! I think she was pretty pleased with her first popovers…she even went out and bought a popover pan!
