It’s getting close to St. Patrick’s Day, so you know what that means…
Every blog is going green, or Irish Cream.
Me, I am taking the Irish Cream route this go round, with an Irish Cream infused Dark Chocolate Chip Cookie. I also went big – these cookies are the size you buy at the mall. You know, the cookies the size of your face.
That way you can honestly say “I only had one cookie” – even if you have to lay down on your bed to zip your jeans. You and I BOTH know it wasn’t the cookie anyway, it was your stupid dryer. Dryers are notorious for shrinking pants.
Someone should look in to that.
Ingredients
- 12 Tablespoons Browned Butter (salted butter)
- 1/3 cup Dark Brown Sugar
- 1/2 cup Light Brown sugar
- 2/3 cup Sugar
- 2 large eggs
- 1 teaspoons Vanilla
- 1 tablespoon Irish Cream
- 2 cups plus 2 Tablespoons All Purpose Flour
- 1/2 teaspoon Baking Soda
- 9 ounces chopped chocolate bars (I used Semi-sweet Scharffen-Berger)
- sea salt or fleur de sel for topping
Instructions
- Once butter is browned and slightly cooled, add butter to sugars and mix well. Add the eggs, vanilla, and Irish Cream to the batter and mix thoroughly. Combine the dry ingredients in a separate bowl, then add to batter, beating only until combined.
- Add chocolate to batter, then place mixing bowl in refrigerator for 15 minutes to cool a bit. Preheat oven to 325 while dough chills.
- Place balls of dough on prepared cookie sheet (I highly recommend a SilPat for this), leaving tops quite jagged so that cookies get nice surfaces. Sprinkle with sea salt or fleur de sel. Bake for 15 minutes, or until just golden brown, for best results.
In related (although unrelated) news – have you tried those Downy UnSTOPables in your laundry? Yes, I know they misspelled unstoppable. it doesn’t matter. That stuff is worth it’s weight in chocolate. They are these little pellets you throw in with your wash, and they smell like sunshine and rainbows. The best part is, they KEEP your laundry smelling that way. No lie, we washed our sheets in the stuff, and even after sleeping in them for 2 weeks – you could STILL smell that yummy smell when you simply walked in the room.
LOVE that stuff. And hello, Downy? I could use about a truckload of them. I already feel like a spokesperson, and they have no idea who I even am. I stop people on the street to enlighten them. In the grocery. At Walmart. On Twitter. I am literally scared to death they won’t be around forever, so I encourage the world to buy them so that Downy will keep making them.
Watch for me on Hoarders in 2 years, trapped in a little corner of my house behind bottles and bottles of Unstopables. It could happen.

Those cookies look wonderful and I am A-OK that you chose to go Irish Cream, I’m not a huge fan of green food unless it’s a vegetable that is supposed to be green or chocolate. As for the Downy Unstopables I was laughing as I read that because right now there is a grocery bag of samples sitting on the floor next to my chair. I’m not kidding, I am a merchandiser and P&G/Downy are one of our clients and they sent us samples and some got lost in my mess of work stuff and just found yesterday. One note though they don’t replace the fabric softener they are in addition to & if you have a front loader they just go in the drum with the clothing. My husband put them in the fabric softener spot in the dispenser and because it has a bit of water in it, it was a mess to clean up that was not fun! I haven’t noticed the smell on the laundry part but I was smelling it for a while after cleaning up that mess.
You are SO going to have to ship me every obe you can get your hands on. Not kidding.

You got us hooked on unstopables after you came up for New Year’s. Now if those crafty P&G people could come up with something that would fold and put away my laundry I’d be in good shape!
