Chocolate Chip Cookie Popovers

Not kidding…these are ridiculous.

Imagine the softest, richest, droolworthiest chocolate chip cookie you’ve ever had.

Multiply that by 17.  Or 42.

These are that good.

cookiespopovers4Why didn’t I think of it before?  Why did it take not having a working oven in my house to realize the potential of the simplest, most comforting food? (Hey, it’s been proven. Look it up.)

Why did I have to STOP thinking to actually MAKE it HAPPEN?

That’s neither here nor there, now, is it?  I made them.  We devoured them.  It was bliss.

I highly suggest  side of fresh whipped cream with these, or, if you’re feeling a little lazy, a glass of milk will do.  Or heck, ice cream would make a great addition.  You can down it for breakfast if you like…I won’t judge.  As far as I’m concerned it’s just really cold dairy.

Chocolate Chip Cookie Popovers

Rating: 51

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 4 souffle cups, or 6 large/12 mini popovers

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1 cup plus 1 tablespoon All Purpose Flour
  • 1/3 cup packed brown sugar
  • 1 tablespoon melted butter
  • pinch salt
  • 2 teaspoons vanilla
  • 3 ounce Scharffen Berger Chocolate, 62% Dark, chopped
  • 3 Tablespoons Butter

Instructions

  1. Preheat oven to 375F. Divide the 3 tablespoons butter into the cups of your Pop Over Pan. (If you don’t own one, you can use a muffin tin, but you will need to use all 12 cups. Just divide the butter up evenly) Place the pan in the oven for 3-5 minutes while you are making the batter.
  2. In medium bowl, beat the eggs with the milk,melted butter, vanilla, and sugar, then whisk in the flour and salt. Add roughly 3/4 of the chopped chocolate to the batter.
  3. Pour the batter into the butter filled cups. Return to oven for 5 minutes, then reduce the temperature to 350 and continue to bake for another 20 minutes. Drizzle with chocolate syrup, the remaining chopped chocolate, and whipped cream, if desired.. Serve and enjoy!

I made mine using souffle cups, as you can see, and they worked like a charm.  Of course, use a popover pan if you have one, or a muffin tin if you don’t, or tiny mason jars or souffle cups, the end result is the same.

Slobbering will occur. Massive salivating.

ScharffenBerger is my go-to decadence of choice, and I went down home comfort chocolate for these – not too dark, not too milky. I went with the 62% dark, and it was perfect.  You could always be daring and use one of their other varieties, like milk chocolate or mocha, as I imagine those would be equally fantastic.

Don’t have a selection of ScharffenBerger Chocolate on hand?  How sad for you.

I would LOVE to win them. Toured ScharffenBerger when they were in Berkeley, have a chocolate cabinet in my garage and two drawers of butter in my garage fridge…definitely could put it to use!
