Crunchy Biscoff Ice Cream {And a Giveaway!}

Biscoff Spread is the devil.

I swear, once you open a jar, that’s the end.  It can sit in the cupboard, tightly sealed, teasing you  from its perch, but you can overcome your desire to eat it, if only that seal is intact.  That all goes out the window the second you twist it open.

Whooosh.

From that moment forward, you find it necessary to spread “just a little” on your bananas. Your toast. Your biscuits.  That piece of lint you just found in your pocket.  Nothing is to remain untouched – it MUST have Biscoff on it.

I know first hand.

And to make it even worse, Biscoff Spread not only comes in the original smooth consistency, you can now get it crunchy.

As if.

So I have both.  Don’t make me choose like that.  It would be like Sophie’s Choice, and though I haven’t seen the movie or read the book, I hear it’s a pretty dramatic choice to make. I refuse to choose when I can just have both.

For this ridiculous ice cream, I merely converted my Peanut Butter Sherbet recipe from my Cookbook into this super easy, over-the-top Biscoff recipe.  The two – peanut butter and Biscoff Spread – are very similar in their consistency, though be warned, the Biscoff is a little oilier. Not off-putting by any stretch though.  It makes for a nice texture, and the flavor of the emulsified cookies is hard to beat.

It’s cookies and ice cream, all in one.  No more choosing, kids…you can have it all.

Crunchy Biscoff Ice Cream

Rating: 51

Prep Time: 10 minutes

Total Time: 4 hours

Yield: 1 Quart

Ingredients

  • 1 cup Crunchy Biscoff Spread
  • 3/4 cup sugar
  • 2 cups half and half
  • 3/4 cups heavy cream
  • Pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Combine all ingredients in the food processor, and puree until very smooth. Chill in refrigerator for 2-4 hours, or overnight.
  2. Once chilled, add to ice cream maker and follow manufacturer’s instructions for freezing.

Having just sat here and enjoyed a small-ish cup of coffee brownie fudge by Breyer’s, it’s easy to say that, but honestly I’m a soft-serve-vanilla girl through and through! With sprinkles of any kind!
