Strawberry and Banana Shortcake Biscuits {And a Giveaway!}

Are biscuits popular everywhere?

I wonder things like this from time to time. Don’t judge – my mind just wanders off into strange places on occasion, and recently, I started questioning biscuits.

The Hatfields & McCoys mini-series is what started the process. Being from West Virginia, I studied the feud in junior high, so I guess the history of it was just engrained in me. But what did the rest of the country know about it? Did you know about it at all? Did you even care to watch it on TV?

For over a month, Jon and I waited for the show to start – what a great cast – and the previews did an amazing job of luring us in. For me, the series didn’t disappoint. I loved it! I was really impressed with the attention spent to keeping the storyline as accurate as possible – and for those of you who didn’t bother reading the history, it really WAS accurate. Sometimes the truth really does seem like fiction. But this all happened. If you didn’t catch it, you should try to go online and see if you can watch it there. I could have Googled it for you, but, gracious, y’all can handle something like that.

Anyway, biscuits are as much a part of the south as the Hatfields, so during the mini-series, I started craving them. In fact, I HAD to have them. Nothing else would do. Instead of my normal recipe though, I sweetened these up a bit and turned them into dessert.

Strawberry and Banana Shortcakes… Hatfield Style. (I have to choose the Hatfields – they were the West Virginians. Plus, Kevin Costner did an amazing Devil Anse.)

You can throw these sweet biscuits together in a few short minutes, and while they bake, whip some cream with powdered sugar and vanilla. Keep it sweet, folks! Then, once they are out of the oven, top them with a little strawberry pie filling (I used Lucky Leaf), some fresh strawberries and sliced bananas (Dole, of course!), then a big dollop of that whipped cream.

So good! (And so easy!)

Strawberry and Banana Shortcake Biscuits

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Yield: 8-10 Servings

Ingredients

2 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 stick cold or frozen butter
1/4 cup heavy cream
1/2 cup whole milk
1/2 teaspoon vanilla extract
To Top:
Lucky Leaf Brand Strawberry Pie Filling
Homemade Whipped Cream
Fresh Strawberries, chopped or sliced
Sliced Dole Banana

Instructions

Preheat oven to 400.
Cut the butter in to the dry ingredients using a fork or pastry cutter (or your fingers). Add the wet ingredients. Use a spoon to combine all ingredients until well mixed. Knead for 1-2 minutes, then press or roll out to 1/2 inch thickness, then fold in half onto itself. Cut into squares or cut into rounds using a biscuit cutter. Bake at 400 for 12-15 minutes.
Top baked biscuits with heaping spoonfuls of Lucky Leaf Strawberry Pie Filling, fresh berries, slices of banana, and whipped cream. Serve and enjoy!
