S’mores Cookie Stackers

My five year old is a marshmallow roasting aficionado. This summer, he and Jon built many a fire in our stone fire pit, and rarely was there a moment that marshmallows were not on hand. I would buy a bag or two (love those GIANT marshmallows!) nearly every trip to the grocery store…just to be sure we had enough for everyone.

The best part of having a five year old Marshmallow Lover? He’ll roast them FOR me. I just show up, and am promptly awarded a perfectly browned, gooey centered giant marshmallow.

Life is good.

We had so many s’mores this summer that it started to warp my mind, and a moment of brilliance struck:

A S’mores Cookbook.

S’mores Popovers, S’mores Muffins, S’mores cakes, pies, tarts. Cheesecake. Poptarts. Brownies.

Cookies.

Good idea, no?

Well, my publisher thought so! So much, in fact, that they are printing a full color, fully beautiful cookbook, full of my s’mores recipes. Like – right NOW!

I was missing from my blog last week (did you notice?) because my lovely friend Bree spent the week with me baking, cooking, roasting, toasting, and photographing scores of recipes. Yes – Bree photographed my book! Lucky me, right? Let me tell you, the photos are gorgeous… I couldn’t have done it without her. We also had Brandi helping us out one day – it was a true group effort, and I KNOW how lucky I am to have such fantastic friends!

The book, believe it or not, will be out in time for THIS SUMMER – so, you’ll have it for all of your marshmallow roasting opportunities. However, in case you have no fire pit, no worries! No fire is required – you can make everything in your oven if need be! I hope you’ll check it out when the time comes!

Until then, these cookies are a great sneak peek of what’s to come– S’mores Cookie Stackers.

A graham cracker, stacked with chip-less cookie dough gets par baked, then topped with a couple of pips of Hershey’s, then a marshmallow. Pop them back into the oven, get the mallow a little toasty, then dive in for delicious!

Of course, my oven, the beauty that she is, is named Gilda, and she’s a stunning 48 inch KitchenAid. Could she do a better job at toasting marshmallows indoors?

No, no she could not. Even heat, constant temperature, and I know what to expect, each and every time. Good stuff.

Such a strange little cookie, but the simplicity of method and recipe is all forgotten once you bite into the deep chocolaty goodness and gooey toasted bite of marshmallow. The graham cracker base makes the perfect serving surface, and makes it really easy to stack them in a storage container. Another great thing to know? Twelve seconds in the microwave bring these cookies back to Fresh-Out-Of-The-Oven perfection!!

S’mores Cookie Stackers

makes 30

  • 12 Tablespoons Salted Butter, melted
  • 1/2 cup Dark Brown Sugar
  • 1/2 cup Light Brown sugar
  • 1/2 cup Sugar
  • 2 large eggs
  • 2 teaspoons Vanilla
  • 2 cups plus 2 Tablespoons All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • Pinch of salt
  • 30 Squares of Graham Crackers (60 rectangles)
  • 60 Pips of Hershey
  • 30 marshmallows

Instructions

Preheat oven to 350. Prepare a baking sheet with a Silpat or parchment paper. Set aside. (Note: if you have more than one baking sheet, that’s great, prep them both.)

In the bowl of a stand mixer, cream butter and sugars. Add the eggs and vanilla to the batter and mix thoroughly. Combine the dry ingredients in a separate bowl, then add to batter, beating only until combined. Place dough in refrigerator while prepping the graham crackers.

Place squares of graham about 2 inches apart on the prepared baking sheet. Use a cookie scoop to place chilled dough onto the center of each graham.

Bake at 350 for 12 minutes. Remove from oven and quickly place 2 pips of Hershey onto each cookie, pressing slightly. Top with marshmallow. Return pans to oven until marshmallows are toasted, about 3-5 minutes. (Keep a close watch as marshmallows go from toasted to burnt quickly!)

Remove from oven; repeat with remaining dough. Enjoy!


What’s a Pip?

You know when you break open a Hershey’s Chocolate Bar, and it is made up of those tiny little breakable rectangles? Each one of those is called a Pip. Now you know! Try using it in a sentence, students.

Just kidding! But, maybe it will come up as a question on Jeopardy, or in conversation one day, and you’ll be all like – yeah, that’s a pip. You can thank me later.

Erewhon Organic Honey Grahams

I also want to pass on another little bit of info to you, concerning graham crackers.

As you may know, I co-hosted Mixed, and one of our amazing sponsors was Attune Foods. I adore the cute little PR rep Annelise! Annelise was kind enough to send me some samples of a few Attune items, one of which was the Erewhon Organic Honey Graham Crackers, which I used in the recipe above.

They are SO good!! I loved the regular grahams, but the cinnamon flavored grahams were outstanding. I came up with a S’mores recipe JUST because of them – but you’ll have to wait for the book on that one!
