Low Calorie Blueberry Ginger Ale

Blueberry Ginger Ale.

I’m not sure why I didn’t think of this sooner, but perhaps it’s because I lived in Virginia, versus Texas.

Why should that matter?

It does.  It really, really does.

You see, in March, in southern Texas?  It was in the 90s. Not the COOL 90s, like, with Nirvana and The DMB, but the HOT, sweaty 90s.  In March.  I keep telling my fella that with all of these property taxes in Texas, you’d think the government would have figured out a way to cool the state off.

But he just kind of gets this weird look on his face like he can’t tell if I’m serious or not, or if I’m just spoiled.  And then he says it’s Not Even Hot Yet.

Yet?

Apparently there’s this phenomenon in the Houston area that means there are over 100 days a year of 100 degree temps.  And yes, these people just expect it, and don’t seem to mind.

I might mind.  I’m not sure yet.  But, just in case, I did buy two new thermostats and I came up with this crazy simple Blueberry Ginger Ale for those sweltering days I have soon to endure.

This drink is fruity and light, full of flavor, and pretty enough to serve at a party, even if it only takes a minute to whip up.  I can see it being by my side all the livelong summer.  Perhaps I’ll add some Moscato to it and pretend it’s just juice at the never-ending Waterpark. Perhaps no one will notice.  Or, perhaps I’ll just be the hit of the summer with all the sweaty moms at the wavepool.

Texas, Y’all.

blueberry-GINGERALE

Blueberry Ginger Ale

Makes 2

Ingredients

  • 3 Equal® Packets
  • 4 ounces ripe blueberries
  • Juice and zest of one large orange
  • 16 ounces Diet Ginger Ale
  • Whole blueberries and orange slices, to garnish

Instructions

1. Combine Equal, berries, juice and zest in a blender.  Puree until smooth.

2. Add half of the Ginger Ale, blend until well mixed.  Add whole blueberries; refrigerate 4 hours or longer, up to 36 hours.  Serve over ice and add remaining Ginger Ale.
