Brazilian Pasta Salad

In case you’ve been napping, this summer holds an exciting event…the Olympics.  This year – it’s in RIO.  Can you imagine?  The Summer Games in magical Brazil, in the shadows of Sugarloaf and around the corner from Iguazu Falls?  In Rio, a city that is so robust and alive, full of excitement and tastes and sounds?  I would LOVE to be there. But alas, it is faaar.  And quite honestly, I bet it is hot there.  It’s hot enough HERE, in the Texas. I’m still adjusting to the climate change, so y’all may have to go on down there without me.  Unless the U.S. needs, me, that is.  I do go where needed.

While I am in no way ready for any particular event (I would rock at the swimming if I could keep my face in the water or jump in without holding my nose or actually not die after two laps), I AM, however, ready for the Brazilian cuisine.

Take this recipe, for example.

Brazilian Pasta Salad.

All of us are pretty keen on the typical pasta salads, be them oil and vinegar based, or mayonnaise based.  This recipe is no exception.  It’s incredibly easy to throw together, but, instead of the standard flavors you expect, you should be prepared for a whole new experience.  Grilled meat (is there anything MORE Brazilian?), tangy pineapple.  Fresh vegetables, cilantro, some punchy spice.  It has become one of my favorite recipes, and I am so thankful to Dreamfields for pushing me to create this “out of the box” dishes.

Yep…Dreamfields.  You know I love them, I’ve worked with this pasta for what – 6 years now? Longer?  I love their attention to health, to creating not just another brand of pasta, but one that can actually make a difference.  It’s the only brand of pasta you ever find in my pantry, and I stand behind it.  Dreamfields has the taste and al dente texture of traditional pasta, yet each one cup cooked serving of Dreamfields has 5 grams of fiber (20% of the daily recommended intake) and 7 grams of plant protein.  Dreamfields unique recipe contains inulin, a prebiotic fiber sourced from chicory root, which helps promote healthy digestion.  Like I said – they aren’t just another pasta.  They provide an EASY way to eat a little better.  Who doesn’t want to be BETTER??  Plus, they offer plenty of great shapes: Elbows, Penne Rigate, Rigatoni, Angel Hair, Spaghetti, Linguine, and Lasagna.

So, when asked to kick off this years Pastapalooza, of course, I said YES.  And with the added bonus of having to really dig deep and create something a little unusual for me?  Well, I just HAD to.
