Spicy Jalapeno Meatballs and Waffles

Waffles are so IN right now. Not just for breakfast, you know – but for dinners and lunches and snacks as well. From the classic diner to the top gastropub to the finest restaurant, it seems chefs everywhere are experimenting with waffles in one way or another.

Me? I chose to pair quick and easy waffles with a dollop of prepared coleslaw, and Spicy Jalapeno and Pepperjack Chicken Meatballs from my friends at alfresco. Alfresco is a company I have worked with on several occasions, and I love the taste and convenience of every one of the products I have tried. These meatballs are no exception.

Full of flavor and a cinch to make in the oven, pan, or microwave if you so choose, these meatballs are the perfect meat to pair with the creamy coleslaw and subtly sweet waffles. Serve them on a fancy toothpick, line them up on a tray, and let your game guests go gaga for your inventiveness.

Heck, they may even forget the big game is even on. They may even forget THEIR TEAM isn’t playing. Mine isn’t. You see, my boyfriend plays for the Packers. He’s blonde and gorgeous, and has a sense of humor. He doesn’t actually KNOW we are seeing each other, or rather, that I am seeing HIM, but that’s trivial. Like I said, he has a sense of humor, so I know he gets me.

Spicy Jalapeno Meatballs and Waffles

For the Waffles

INGREDIENTS

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup Light Brown Sugar
  • 3 teaspoons baking powder
  • 2 eggs, separated
  • 1 cup milk
  • 1/2 cup buttermilk
  • 1 cup butter, melted

INSTRUCTIONS

  1. In a bowl, combine flour, sugars and baking powder. In a separate bowl, lightly beat egg yolks; add milk, and butter and mix well. Add mixture to dry ingredients until just combined.
  2. In a separate bowl, beat egg whites until stiff peaks form. Fold egg whites into batter.
  3. Scoop batter into preheated waffle iron according to manufacturer’s directions until golden brown.

TO PREPARE

Prepare waffles and cut into bit sized pieces. Top with prepared coleslaw. Heat meatballs according to package instructions, and place a cooked meatball on top of the coleslaw. Skewer with a toothpick. Serve warm.
