Strawberry Peach Gelato…and a KitchenAid Mixer Giveaway for 1000 Cooks for the Cure


For the past few years, I’ve been making pink foods along with KitchenAid, in an effort to increase breast cancer awareness and the Susan G. Komen Foundation.  KitchenAid is a huge supporter of the foundation, and it’s something that touches so many of us.

So of course, when the note came in again this year asking if I’d Pink Up my blog, I said yes.

This year, I went cold and sweet, and actually pretty healthy.  Strawberry Peach Gelato.

photo-dbrAll super fresh ingredients, not too much sugar (really, very little per serving!), and a touch of cream.  Throw it in your ice cream maker and reap the rewards in no time at all. In fact, it’s so quick and easy, I made it on my Daytime Blue Ridge segment last week, so if you’d like to watch that to see how it’s done, just click though here! The strawberry and peach are perfect partners, and with both being so abundant around the country, NOW is the time to make it!


Strawberry Peach Gelato


1 pound strawberries, capped
2 peaches, peeled and chopped
Juice of one lemon
1/2 cup simple syrup
2/3 cup heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract


  1. Purée berries and peaches until smooth. Add lemon juice and simple syrup; blend well.
    2. In a small mixing bowl, beat cream until soft peaks. Add powdered sugar and vanilla; whip to stiff peaks. Fold into fruit mixture.
    3. Pour mixture into ice cream maker and process according to manufacturers instructions.
    4. Freeze. Remove from freezer 5 minutes before serving for better consistency.

So, let’s do what we can, while we can.  Even if it’s just pink ice cream and a yard full of happy neighbors with a few bucks.

Yasso Greek Frozen Yogurt Bars…and a Giveaway!


Last week I got to have a little bit of fun with friends and family, courtesy of Yasso.  A party, with lots of food and frozen yogurt pops?  And MY crazy family?

I love the fact that as a blogger I am encouraged to try new and different products.  Usually I will get a sample or two – enough to share with Jon and Seven – but occassionally, I am even luckier!  Trying out and sharing the experience with the people in my life that I can’t get enough of is a true bonus.  My family, for example?


I mean, look at my cousins here.  Is this a normal way to behave, when you are asked to show off how you feel about a dessert on a stick?

Okay, don’t answer that.  Maybe your friends are as silly as mine.

We all shared a few boxes of the new Yasso Greek Frozen Yogurt Bars, in a couple of flavors…Chocolate Fudge and Coconut.  Overall, we all agreed the Coconut was our favorite, though the fudge was really good.  There was just something so summery and smooth about the coconut.  Since the party, I’ve heard from my sister-in-law that the salted caramel flavor is to die for…and I trust her opinion.  It will definitely be the next flavor I try, though if I can find it, the raspberry sounds so delicious! (And Blueberry! Mint Chocolate? Yum.)

Envy Apples

Hello, I’m Christine and I’m delighted to be guest posting for Susan today. Thanks for having me!

I blog over at Cook the Story where I share recipes that fit life. These are recipes for quick weeknight dinners, side dishes and fast ideas for entertaining. Today I’m telling you about my newest quick dinner that also works at a barbecue: Sausage and Apple Kebabs! Kebabs with apple and sausage Did you know that you can make kebabs with sausage? Maybe you did (aren’t you smart!). But I discovered it on Pinterest very recently when I was adding kebab recipe ideas to my Skewers Board. I think these are brilliant because the sausage is fully cooked (think kielbasa and wieners). That means you’re not dealing with raw meat, which is perfect for a party or get together. Everything is cooked and edible. Your only job is to warm it up (and maybe get some grill marks going). I’ve mentioned the brilliance of not dealing with raw meat at a barbecue before when I shared this Make-Ahead Ribs recipe. It just plain makes life easier. And I like that. These kebabs use Chicken & Apple Sausages (I found them in the organic lunchmeat section of my grocery store, near the organic weiners), sweet Vidalia onions and juicy crunchy wedges of Envy Apples. The Envy Apples are perfect for grilling because they don’t brown when cooked, or even after being cut like most apples do. Instead they stay white for a long time. I even cut them in the evening and pack them in my kids’ lunches. No lemon juice or anything and they stay nice until lunchtime. Kebabs with apple and sausageBefore grilling, the kebabs are doused in a honey and grainy mustard mixture. The mustard is of course great with sausages but it also does good things to the apples and onions. I know you’re going to love how quick and easy these kebabs are and how tasty they are. Kebabs with apple and sausage

Apple , Sausage and Onion Kebabs

Serves 4

Prep Time: 20 minutes, Cook Time: 10 minutes


  • ⅓ cup grainy mustard
  • ¼ cup honey
  • 1 Tbsp lemon juice
  • ¼ tsp. salt
  • 1 medium Vidalia onion, cut into 8 wedges
  • 8-6″ skewers
  • 12 oz fully-cooked sweet apple and chicken sausages, cut into 16 pieces
  • 2 envy apples, cut into 8 wedges each


1. Preheat grill for direct cooking over medium heat.

2. In a small bowl combine the mustard, honey, lemon juice, and salt.

3. Divide the layers of each onion wedge so that you have two pieces.

4. Onto a skewer thread a piece of sausage, then an apple wedge, onion piece, sausage, apple onion. Put it into a 9″x11″ pan. Repeat with remaining skewers and ingredients.

5. Pour mustard sauce over skewers.

6. Put skewers on grill. Grill on one side until undersides of sausages are blackened in spots and apples have some grill marks, 3-5 minutes. Flip and grill until undersides are browned as well, another 3-5 minutes.

Shrimp and Waffles with Pina Colada Sauce…#CoastIntoSummer and a Huge Giveaway!

Shrimp and Waffles?  Did she stutter?

No, I did not.

The rage for months and months has been Chicken and Waffles.  Syrup topped, or strawberry sauce topped, or honey glazed…you name it, it’s been done.  So, when my friends at SeaPak asked ME how I would Coast Into Summer using shrimp…my mind went to waffles.

Now wait, I didn’t douse them in maple syrup, no.  I made a Pina Colada sauce that plays so perfectly with the SeaPak Jumbo Butterfly Shrimp that you’ll wonder how you ever lived without it.  And as for the waffles? Well, make any recipe you want for those – sweet or savory, or heck, even out of the freezer section if you want.  I made malted buttermilk waffles, but that’s because hello, I am an overachiever.

(That was supposed to be funny.)

Laugh, for crying out loud.  I’m fragile.

In all seriousness though, folks, give this a try.  Yes, it makes a great meal, but if you use the tiny little waffles, these would be adorable skewered and served as appetizers at your next shindig.  They only take 15 minutes start to finish, and those 15 minutes are spent stirring for a brief minute and then waiting for the oven to beep at you.

So. Easy.

Shrimp and Waffles with Pina Colada Sauce


Arrange waffles on serving plate with cooked shrimp (follow package instructions).  Top with desired amount of pina colada sauce.  enjoy!

For the Pina Colada Sauce:

  • 1/2 cup sour cream
  • 1/4 cup crushed pineapple
  • 2 tablespoons pineapple juice
  • 1/4 cup piña colada mix
  • 3-4 tablespoons sugar

Combine all ingredients, chill and serve.

Sriracha Shrimp and Candied Bacon Crostini…and a Giveaway

Good news, you guys…I’m back.

Have you missed me?  Oh come on now…certainly ONE of you has.  Mom?

Yeah, okay.

Anyway, life has been a bit nuts lately, and travel and television spots have kept me beyond busy, but I’m still here and I’m still cooking.  This time…for National Shrimp Day.

Yes, it exists.

National Shrimp Day is May 10, just in time to kick off summer and seafood and beach trips and bonfires.  Grills will fire up and sandy toes will be the trendiest accessory.  I am SO ready for this.


Lucky for me, I was just recently approached by SeaPak to work with them on a long term basis, and I am THRILLED.  Their products were already in my freezer, they are available at my local grocery store, and we absolutely love the products.  If you’ve not tried it, you should…the quality is undeniable.  Living in the mountains means seafood is a treat for me, so to be able to get it in a safe, convenient, and great tasting way means a lot to me.  SeaPak delivers.

And yeah, I would have said that anyway.  No one needed to pay me.

So…National Shrimp Day. SeaPak has a huge collection of great ideas and recipes on their site, but I was challenged to create my own.   I wanted to make something perfect for summer entertaining.  The key is simple and yet delicious.  You don’t want to spend all day in the kitchen. You don’t want to have to dirty up a million dishes.  You don’t want to be so busy prepping that you can’t enjoy your company.

Crostini is perfect.  Sriracha Shrimp and Candied Bacon Crostini is even better.


Oh Yes I Did.

Super simple.  So simple, in fact, I feel kind of lame calling it a recipe.

Bread, SeaPak Popcorn Shrimp, Candied Bacon.  That’s pretty much it.  But when it comes together, you have a symphony of yum.

To keep things even easier,  I take advantage of the grocery store and bakery, and I make no excuses.  Sure, I can make my own baguette, but why?  My local bakery makes them every single day and they are delicious!  And that lady needs a job, so, I’m saving my economy, right?  One loaf of bread at a time, kiddos.

The candied bacon? Easy as well.  I make a huge batch in advance and just keep it around for occasions that call for sweet, delicious candied meat.  A baking sheet full of bacon, sprinkled with plenty of brown sugar, then baked at 350 until crispy?  That’s all it takes.  Be warned though – it is terribly addicting.

And then the SeaPak Popcorn Shrimp.  Literally heat and eat. Plus, If you are clever and lay down a piece of aluminum foil on your baking sheet, you won’t even have to wash the pan!  You can thank me later.

Yes, there is a little more to the recipe than the above, but trust me, it’s a snap, and you’ll get rave reviews.  Pull it together for your next shindig and watch the plate disappear.



Sriracha Shrimp and Candied Bacon Crostini


  • 1 French Baguette, sliced
  • 2-3 tablespoons butter
  • 1 12 oz box SeaPak Popcorn Shrimp, prepared
  • 1/4 cup mayonnaise
  • 3 tablespoons Sriracha
  • 1/2 cup candied bacon, chopped
  • Cilantro, to top



  1. Preheat oven to 350.  Spread butter onto each baguette slice, then bake until slightly crispy.
  2. While bread is baking, combine mayonnaise and sriracha in a small bowl.
  3. When bread is crisped, remove from oven and top with mayonnaise mixture.  Top with prepared shrimp, then replace into oven for 2 minutes.
  4. Remove after baking and add candied bacon pieces and cilantro.  Serve and enjoy!

Homemade Vegetable Beef Soup…and a Giveaway!

I did not make this Vegetable Beef soup.

I ate this soup.  In fact, I ate a LOT of this soup.

But…it was Jon.  Jon Dough.  Jon made this soup, and it was incredible.


As most of you reading this were in the same boat as I, last week was a torrent of winter weather.  Snow was forecasted, kids came home early from school, spouses were home in advance of the impending storm.

I don’t do well with extra people in my house.

Yes, I am aware that they LIVE here.  But I am a creature of habit, and I like my space.  I like my routine.  I like peace and quiet.  When my boys are here, I feel…different.  Not bad, but, well, it takes some getting used to.  There is no such thing as peace and quiet.

So it all began Wednesday afternoon.

Sev got home at noon, Jon was close behind.  Those two get stir crazy trapped in a house, but me?  Heck, I could stay in the house for a month and not care.  I like it.  By Thursday (which felt like four days or more since the day before) Jon was ready to get out.  No matter there was close to two feet of snow on the ground.  No matter we had plenty of other food to eat.  He HAD to go to the store.  He HAD to make soup.  So…I said I wanted Vegetable Beef Soup, and he complied.


Deep inside, only my mom makes a great vegetable soup, so, I wasn’t expecting much.  I pretty much left him to his own devices in the kitchen while I hibernated and watched the Olympics, and every so often, I’d poke my head in to see how things were going.

As it turns out…very well.

His recipe was so hearty – huge chunks of potatoes and carrots, lots of corn and peas, and the beef?  Ever so tender and full of flavor.  He added a healthy dose of sriracha, and that amped up a nice lip tingle after the bowl was emptied.

Good stuff.

My mom?  Well, her soup is still the soup of my childhood, and it will always make me feel good.  But this?  Jon’s soup ranks up there with some of the best I’ve ever had.  I’d like to take the credit, but it turns out he’s on to my little blog here, and I guess it’s better to just be honest this time.  HE made it.  I ate it.

Homemade Vegetable Beef Soup

Serves 6-8



  • 1 pound diced sirloin
  • 2 tablespoons butter
  • 1 medium white onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 28 oz beef broth
  • 3 cups water
  • 28 oz canned diced tomatoes
  • 1 cup frozen corn
  • 3 large Yukon Gold potatoes, cut into bite bized pieces
  • 3 bay leaves
  • 1 1/2 Tablespoons garlic powder
  • 1 cup frozen peas
  • 1 1/2 teaspoons sriracha
  • Salt and Pepper, to taste



  1. In large saute pan, brown the sirloin over medium heat.  Remove from pan.
  2. Add butter to the now empty pan and saute the onions, carrots, and celery until tender.
  3. Remove sirloin and cooked vegetables to the bowl of your slow cooker, and add beef broth, water, undrained tomatoes, corn, potatoes, bay leaves, and garlic powder.  Stir to combine.  Cook according to slow cooker instructions (average 3 hours on high, 5 hours on low.  Potatoes will be tender.)
  4. When potatoes are tender, add peas, sriracha, and salt and pepper as desired.  Allow to cook for 15-20 additional minutes.  Serve hot.

S’mores Chocolate Marshmallow Milk…and a Giveaway from #TruMoo


You knew it was coming, didn’t you?  I mean, here it is, February 2014 already, and I have only mentioned S’mores ONCE since the beginning of the year.

And I wrote the S’mores Cookbook.

Of course it was coming.  S’mores will ALWAYS be COMING.


So when I learned that TruMoo had a new product out this month (Seven LOVES TruMoo – he drinks the chocolate and vanilla all the time) and that it is Chocolate Marshmallow Milk – well, you and I both know S’mores were going to happen.  How could it be any other way?

In my cookbook, I included a S’mores Chocolate Milk recipe, but with the creation of this TruMoo flavor?  Well, you no longer need a recipe.  The milk IS the recipe, pretty much.  Of course, I made it better.  I jazzed it up with a little fanciful rim…

I know, right?  I am terribly creative.

But here’s the thing – I didn’t NEED to be.  Why mess with a good thing?  Chocolate and Marshmallow is already IN the milk, so all you need is a little taste of graham to bring the s’mores flavor home.  Dip the rim of your glass in melted chocolate, then dunk it in a pile of crushed graham crackers (I used chocolate graham crackers).  Add the TruMoo Chocolate Marshmallow Milk and, if you are feeling frisky, a squeeze of chocolate syrup, then give it a stir.

Voila – you have S’mores Chocolate Marshmallow Milk.


Since I JUST got my hands on this stuff, my mind is racing with ideas.  Hot cocoa.  Ice Cream.  Poured over chocolaty cereals.  Where else can I use it?  Pudding? Pie?  Ohhh – cake?  Yesss.  What would YOU do with it?  Tell me!

More genius here – the Chopula Spatula also keeps the counters clean thanks to it’s design.  Stir the spaghetti sauce, then lay down the Chopula…no filth other than maybe a drip or two.  It’s non-stick, too, and gets under things easily – like a pancake or a crepe.  Strong enough to chop, great to stir, perfect for flipping – Good stuff!

Garject Garlic Press

Do you use a lot of fresh garlic?  This little contraption is for YOU.  Garject’s  design easily and completely presses multiple garlic cloves at once, without the need to peel them first – you just press the peel and eject button and bam – into the trash the peel goes without you ever having to touch it.  A quick rinse and Garject actually kind of cleans itself.  Cleans ITSELF.  I wish Dreamfarm designed kids.

The OnPot

Where do you put the kid when you need to stir the pot?  on the counter? On the stove?  Age old question, but a new solution.  The OnPot hangs onto the side of your pot and props the lid right there.  No mess, no warping the formica.  No ring of condensed water to wipe up.  Maybe I’m lazier than you, but I love this little thing.



Mini Supoon

Another weird name, another cool product.  Like the Chopula, the Supoon is lifted off the counter, leaving messes at bay.  Non-stick and dishwasher safe…and just plain neat to look at.



Cutting boards.  Great things, but these make them better.  Instead of always wondering which side of the cutting board you used for meat and which side you used for veggies, Chobs are marked and you never have to guess.  Plus, they grip the counter making the board stay put – no slipping!
