Baking Baking, Dawn ’til Dark…
Today has been a really long day in the kitchen, and every recipe was a new one. I had never made scones or biscotti (nor really eaten them, as I like sweeter sweets and don’t drink coffee) but I did manage to make 2 different varieties of each. I made Chocolate Almond Biscotti and an Orange Zest Almond Biscotti, and for the scones I made Cranberry and a Blueberry variety. I also had the time to make both Strawberry Cream Cheese and Blueberry Cream Cheese Muffins (big YUM) and thanks to Lick the Spatula, I tried her Lemony Cupcakes with a Blueberry Icing. To me, the cupcakes were more dense, like a muffin, and not too sweet, so I am considering them muffins, at least for the coffee shop order. They look good, and taste great, though I wish I had been able to get that icing to thicken up enough to let me pipe it on nice and tall. Instead, it was a bit messy and runny, but tasted oh so good. Tomorrow I hope to finish up the coffeeshop order, by making a few more muffins and the lemon bars they requested. I may even make some mini-lemon pies if I can find the time and sneak them in the order.
Here’s a look at the progress I made today – girls, this is a lot of work – but so much fun!
