Meet. My. Cupcake.

My cupcake wants to win the Iron Cupcake Challenge. Why? Well, because of the faboooo prizes, that’s why. Now, if you’ve read this much, keep reading. I need you to VOTE for this cupcake. He is like no other. He deserves the title of the Iron Cupcake. He’s a Bad Ass Cupcake. Why, just look at those flames.

Voting begins at NOON on August 31 over at No One Puts Cupcake in a Corner. If ever I needed a vote, it will be then. So don’t be surprised if I hassle you again around, say, August 31. Did I mention that’s Seven’s Birthday? Don’t you want to vote for Seven’s Mum?

The “Man in Black” Ring of Fire Cupcake.


There may be some of you wondering – what’s this Iron Cupcake thing all about? Well, it’s a challenge. We’re supposed to create a cupcake that has a special ingredient in it. This month just so happened to be CHILI. As in chili chili. The Hot vegetable? Yep, that one. We have the option of using it in the cake, the filling or the icing. But not MY cupcake. MY Cupcake is daring. My cupcake uses chili everywhere..and still tastes good. Oh. So. Good.

Cayenne Chili Powder in the cake batter. Chili infused chocolate chunks in the filling. And De Arbol Chili Powder in the icing. This cupcake is Sweet Fire. The sweet hits you first and then leaves you sweating before you realize what you’ve done. And what goes better with Chili than lime? Ummm, nothing. So look for that kick of twang. It’s there. And did I mention it’s Black? Yeah, it’s black. Johnny Cash all the way, baby. I’m Walkin’ the Line.

And now I give you the recipe…it’s an original, though adapted from so many others.

The Man in Black Ring of Fire Cupcake
makes 15 large cupcakes

  • 1 1/2 cups AP Flour
  • 1 cup Sugar
  • 3/8 cup Unsweetened Cocoa Powder
  • 1/8 cup Sweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2/3 cup oil
  • 2 tsp. Vanilla
  • 1 tsp. Apple Cider Vinegar
  • 2 cups very cold water
  • 1/2 tsp Cayenne Chili Pepper
  • Black Coloring Gel

Filling:

  • 4 oz. Cream Cheese, softened
  • 1/3 cup plus 1 Tbsp. cup sugar
  • 1/2 an egg
  • 1 tsp. Lime juice
  • 1 Chili infused Chocolate bar (3.5 oz) – chopped

Icing:

  • 1 stick butter, room temperature
  • 4 oz. cream cheese, room temperature
  • 2 cups confectioners sugar
  • 1/2 Vanilla Bean, scraped
  • 1/2 tsp. Lime Juice
  • pinch De Arbol Chili Pepper
  • Red, Yellow and Orange Food Coloring Gels


For Cake:

Preheat oven to 350. Combine all dry ingredients. In separate bowl, combine wet ingredients. In mixer on low speed, mix until just combined.

For Filling:

Cream ingredients together until smooth. Add Chocolate chunks once creamed.

To assemble, Fill prepared cupcake liners approximately half full. Add small scoop of the cream cheese and chocolate chunk filling, top with a little more batter. Liner should be around 2/3 full.

Bake for 19-22 minutes.

Once cooled, top with icing.

To make the icing, cream together Cream Cheese, lime juice and Butter until smooth. Add vanilla to powdered sugar and add to butter mixture until smooth. Separate icing into 3 and add coloring until desired shade is achieved, add the icing to piping bag and pipe onto cupcakes. Garnish with chocolate decoration if desired.
