Grilled Pineapple Shrimp & One Week Down!
One week completed in the 4 week Food Challenge and we’re going strong! I keep telling anyone who will listen how liberating this challenge is…to be able to just make something that doesn’t cost anything, using ingredients you already own is so…freeing. I should have done this ages ago. It’s doing great things for the looks of my fridge and freezer – I don’t think they’ve ever looked so clean!
I am going to share with you a dinner we’ve made dozens of times before, but somehow I have yet to blog about it. It’s a simple yet good looking and great tasting meal, sure to impress any dinner companion. Give it a go sometime!
Grilled Pineapple Shrimp
16oz Peeled & Deveined Shrimp
1 1/2 Tablespoons Old Bay
Chopped Red Pepper
1 cup Cubed Pineapple
1/2 Cup Brown Sugar
3 Tablespoons cubed butter
Combine all ingredients and wrap in aluminum foil, grill until shrimp is cooked through. Serve over rice if desired.
Day Seven Rundown: No Money Spent.
Breakfast: Seven had grapes, blueberries, cheese and whatever Mom gave him. I worked today so she kept him, as per usual.
Lunch: Sev ate with Mom & Dad. Mom brought me leftover chicken strips, baked beans & watermelon form her cookout. Stll getting rid of those leftovers!
Dinner: We all had the Grilled shrimp & Zatarains rice, a salad made from our spinach, and corn on the cob from the freezer. Sev also had hot dogs.
