Watermelon Berry Vinaigrette

 

Hello summertime!

As you may know, we’ve been doing the Penny Pinching Pantry Raid for going on 6 days now, and are doing really well with it.  It feels great to clean out the pantry and fridge, and FREEZER, which a repair man is currently fixing as I type.  Great luck, eh?  Good thing we’re saving lots of money this month so that I can afford to pay him!

One of the meals we made last week took advantage of our garden.  We had stuffed zucchini and salad.  the salad is what I am here to write about today – but the zucchini was so good it will get a post all it’s own in a couple of days.  It was great!waermelonvin

For our salad, we harvested lots of mixed lettuce and cucumbers, as well as plenty of raspberries (which sadly, are just about gone but on the bright side, blackberries are here now.).  I also had a huge seedless watermelon to use up, so – watermelon berry vinaigrette was born!

 

This dressing was full of flavor and is so perfect for a hot summer’s evening.  I would think that it would also be fantastic on pork or chicken – I may have to try that soon!  We served it over the lettuce, cherry tomatoes, cucumbers and raspberries…it was heavenly!

Watermelon Berry Vinaigrette

 

  • 1/2 cup Fresh Strawberries
  • 1/2 cup Raspberries
  • 1 teaspoon lemon zest
  • 1 cup watermelon, seeded and cubed
  • 1/3 teaspoon sea salt
  • 2 Tablespoons Balsamic Vinegar
  • 1 1/2 Tablespoons Sugar
  • 2 Tablespoons Vegetable Oil

 

Add all ingredients to a food processor and puree.  Keep refrigerated.

Hope everyone is having a great summer!  And, for the record, we’ve spent under $3 since we started…one onion and 4 lemons were purchased.  We’ve not been starving, either!  Take a look and what we’ve concocted since the first using only what we have on hand:
