Barbecue Pork and Macaroni Grilled Cheese? I was once informed that this the PERFECT sandwich, the sandwich one could eat every day, from here on out.
That, my friends, is saying a LOT. Most people do not enjoy eating the same food more than once in a row, so if one would eat this forever, well, it’s bound to be amazing. And…it is.
Unfortunately, we made these incredible sandwiches the week I originally put myself on a diet. I don’t really want to be that person – the one who goes on and on that I am changing the way I eat (have you SEEN the food I post here? No wonder I’m too big for my britches!) – but, I did eat half of a sandwich. No joke…Best sandwich ever.
Barbeque Pork and Macaroni Grilled Cheese Sandwich.
Barbeque pork is delicious. Mac and cheese? Also delicious. Grilled cheese sandwiches? Staple of deliciousness. What could go wrong?
You could get addicted, and then you’d have to join the gym, with me. This, folks, I do not recommend. It is not a pretty picture, me bouncing around and sweating. So don’t become an addict – you are better than this.
You can stop.

Barbeque Pork & Macaroni Grilled Cheese Sandwiches
makes 2 sandwiches
Ingredients
- 4 slices thick cut bread
- 2 tablespoons butter, softened
- 1/4 pound barbeque pork, with sauce
- 2 slices colby jack cheese
- 1 cup prepared macaroni and cheese
- 1/2 cup prepared cole slaw
Instructions
Butter all four pieces of bread on one side. Place pork on one slice, butter side down. Top with one slide of cheese, followed by half of the macaroni. Top with another slice of bread, butter side up. Repeat with remaining ingredients.
Fry, grilled cheese style, over medium heat. Flip once bottom is browned, and brown other side. Remove from heat, and add coleslaw. Serve hot.
Pork barbeque. To each his own, but we used a Boston Butt that was smoked on the smoker for oh, 11 hours. A ridiculous amount of time…but low and slow and Good Lord was it ever tender. We added a mix of a Carolina Style barbeque sauce with a more tomato based sauce, and that was the way to go. You can buy store bought BBQ, or pick up a container of it from a local joint – just get some and make sue it has a sauce you love.
For the mac and cheese, we used a STORE BRAND. No joke. Not the powdered cheese kind, but the one with the cheese sauce. You want it to not be soupy, and this was just perfect. Cheesy.
For the slaw, you can make your own, buy a kit, or buy it pre-made. We made ours, but it would have been just as good with store bought. It’s really the combination of all the ingredients in the sandwich that make it so incredible.
So there you have it! You want one now, don’t you?

Yummy! There’s a few restaurants in Memphis that serve this sandwich. Love it. Gotta try making it at home.
