Sautéed Brussels Sprouts with Apples

Oh no, you are thinking…another healthy recipe.  Where has Susan gone?

Trust me, I am here.  I still want all.the.things.

But someone recently asked me to give one of their recipes a go, and while they all looked promising, I decided to choose – of my own volition – to try the healthiest looking of the bunch.  Turned out, it tasted fantastic.  Even my man agreed – this recipe, albeit the dreaded BRUSSELS SPROUTS – was a keeper.

Pan seared Brussels sprouts, tossed with caramelized onions and a bit of I Can’t Believe It’s Not Butter!, followed up with chunks of fresh apple and garlic.  I know, I know, it sounds odd, and perhaps it is, but combined, it’s an amazing combination of flavorful goodness.

And healthy.  Low in calories, high in fiber and good protein.  Yes, there are carbs – about 14 net grams per serving – but they are healthy carbs, not the ugly, processed variety.

So eat up!

Sautéed Brussels Sprouts with Apples

recipe from BJ’s Cooking Club

makes 4 servings

Ingredients

  • 3 Tbsp. I Can’t Believe It’s Not Butter!® Spread
  • 1 lb. Brussels sprouts, trimmed, halved lengthwise, (about 4 cups)
  • 1 medium onion, chopped
  • ¼ tsp. salt
  • 1 Gala apple, cored and chopped
  • 2 cloves  garlic, thinly sliced

Instructions

  1. Melt I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium heat.
  2. Add Brussels sprouts, onion and salt. Toss until evenly coated. Cook, stirring occasionally, until Brussels sprouts are golden, about 10 minutes.
  3. Stir in apple and garlic; reduce heat to low, cover and cook, stirring occasionally, until tender, about 10 minutes.
