Oh no, you are thinking…another healthy recipe. Where has Susan gone?
Trust me, I am here. I still want all.the.things.
But someone recently asked me to give one of their recipes a go, and while they all looked promising, I decided to choose – of my own volition – to try the healthiest looking of the bunch. Turned out, it tasted fantastic. Even my man agreed – this recipe, albeit the dreaded BRUSSELS SPROUTS – was a keeper.
Pan seared Brussels sprouts, tossed with caramelized onions and a bit of I Can’t Believe It’s Not Butter!, followed up with chunks of fresh apple and garlic. I know, I know, it sounds odd, and perhaps it is, but combined, it’s an amazing combination of flavorful goodness.
And healthy. Low in calories, high in fiber and good protein. Yes, there are carbs – about 14 net grams per serving – but they are healthy carbs, not the ugly, processed variety.
So eat up!
Sautéed Brussels Sprouts with Apples
recipe from BJ’s Cooking Club
makes 4 servings
- 3 Tbsp. I Can’t Believe It’s Not Butter!® Spread
- 1 lb. Brussels sprouts, trimmed, halved lengthwise, (about 4 cups)
- 1 medium onion, chopped
- ¼ tsp. salt
- 1 Gala apple, cored and chopped
- 2 cloves garlic, thinly sliced
- Melt I Can’t Believe It’s Not Butter!® Spread in large nonstick skillet over medium heat.
- Add Brussels sprouts, onion and salt. Toss until evenly coated. Cook, stirring occasionally, until Brussels sprouts are golden, about 10 minutes.
- Stir in apple and garlic; reduce heat to low, cover and cook, stirring occasionally, until tender, about 10 minutes.
