Mixed Red Berry Pancake Muffins

I should bake and cook with berries more.  I don’t know why I don’t…they are so full of flavor and such vibrant little morsels of goodness.  We used to have a great row of raspberry bushes behind our house…the berries were huge and the seeds were small…and they tasted just like heaven.  I would have stained fingers for 2 solid weeks.

I miss that.

When I was contacted by Sensus, (the largest supplier of chicory root fiber inulin in North America; second largest worldwide) asking if I would be interested in creating a recipe for them to teach all of you lovelies about inulin and fiber, I was a little stumped…until I went to the grocery store.  I wanted to keep it simple for you…I know I don’t like anything complicated myself…so I was inspired by the Mixed Red Berry Simply 100 Chobani yogurt.  Chobani contains extra fiber in the form of inulin (did you know I didn’t!), so that’s a little boost to the ol’ gut.


We should take better care of our guts, you all.  You hear it all the time now – healthy gut.  Take care of your gut.  And it’s true!  If you do, you feel SO much better.  Once I started paying attention to what I ate and how I felt, I have changed my life.  I feel better, my skin is better, I lost weight…all good things.  Did you know that most Americans do not get the recommended amount of fiber in their diet, which is between 25 and 30 grams daily for adults? One way food manufacturers are helping to resolve this problem is by adding fiber, such as chicory root fiber, to everyday packaged foods including: snack bars, yogurt, (like Chobani!) pasta, bread, brownies, and nutritional supplements like fiber gummies.

While fiber is great for us, do take care!  Don’t just in all at once.  Gradually increase fiber over time – such as one chicory root fiber-containing snack bar or yogurt per day – to minimize potential gastrointestinal discomfort to minimize gas production. When the amount of extra fiber is increased slowly, the body will typically adapt in less than two weeks.

But let’s get back to the pancakes.

These beauties could NOT be simpler.  I prefer making the mix from scratch, but I will tell you a little secret.  If you just want to make six pancake muffins, simply combine 1 cup of pancake mix with 1 container of Mixed Red Berry Chobani Yogurt, and about 3 tablespoons of water.  Mix, pour into muffin tins,and bake for 10 minutes. Viola, breakfast is served.  But, if you take the time, the little extra effort you take by mixing from scratch is worth it.

And worth more brownie points.

Mixed Red Berry Pancake Muffins

makes 12


  • 2 cups flour
  • 3 1/4 Tbsp. Sugar
  • 1/2 tsp Salt
  • 2 Tbsp. Baking Powder
  • 1/4 cup Melted Butter
  • 2 Eggs
  • Splash Vanilla
  • 2 containers Mixed Red Berry Chobani Simply 100 Greek Yogurt
  • 1/2 cup milk
  • Sanding sugar, if desired


  1. Combine the dry ingredients. In a glass measuring cup or bowl, melt the butter in the microwave.
  2. Add the eggs, vanilla, yogurt and milk to the melted butter and beat until well combined.
  3. Whisk the mixture into the dry ingredients until smooth. Allow batter to rest 10 minutes, then pour into greased muffin tins.  Top with sanding sugar, if desired.
  4. Bake for 9-11 minutes, or until set. Top with syrup, or eat as you would pancakes.  Muffins freeze well for later use.
