My Kitchen, My World…England!

This week for MKMW Megan of My Baking Adventures decided to take us to England! (though we MKMWers aren’t sure is it’s England or Great Britain…or the UK – I could Google it, but, umm, I sadly don’t care that much. You know where I am talking about.

Guess what?? Been there. To London, anyway. We had a short stopover there for a night or so back in 2003 when we went on a big trip with our friends Adam and Nicole to Spain. It was January, and boy was it ever COLD. One night in those temps was enough. I bought a new scarf. I can’t say I experienced any English food – we ate Italian. It seemed that everything was either Italian or Indian – so Italian it was. perhaps if I had stayed longer I wouldn’t have been missing out all these years!! And people joke that English food is icky!! Well, I am here to say NOT ALL OF IT!!

I made a couple of things. I have made scones and made them ad made them, so I decided to try something new. Yorkshire Pudding. Did you know it’s not pudding? It’s like eggy bread. And FUN! I added savory cheeses and spices to the dough, and it was really pretty good – I love the way they pop up so high and fluffy! I fully intend to nix the savory and add sugar and cinnamon next time and serve them up with syrup and fruit (cooked apples? yummmm) for breakfast. very similar to a Dutch Baby if you’ve ever had one of those – like french toasty but less bread. Just yum. If the whole breakfast pudding turns out – I will definitly post on that! You can find recipes for Yorkshire pudding all over the net – but I used one from allrecipes.com…and then modified it to suit our dinner….we had beef roast and shoepeg corn, so I wanted a full flavored bread.

The second thing I made was Banoffee Pie. Banana/Toffee Pie. I didn’t make that name up. Seriously. Oh. My. Sweet. Baby. Jesus. This is good stuff. Here’s what I did…I had a bunch of too hard to eat chocolate chip cookies (I added too much flour but couldn’t bear to throw them out and yet didn’t want to eat them…you know?) so I threw them in the Food Processor and ground them fine. Then I added some melted butter and formed a pie crust and baked it for about 10 minutes at 350. Once it was cool, I added a fat layer of ripe bananas. Then I topped that with a can of homemade Dulce de Leche (I boiled the Sweetened Condensed Milk in the can for a couple of hours the night before) and then put sweetened whipped cream on top with some toffee bits and mini chocolate chips. Oh Wow. Rich and decadent and tastes like you spent years making it. Like Banana Pudding on meth. I could take a bath in that pie. No joke. So good. I highly recommend it!!
