Weeknight Time Saver with Bertolli Soup

You know me – I am a Stay at Home Mom.

I sit around the house all day, eating bonbons and watching Oprah. That is, when I am not napping, reading a novel, or gazing longingly out the window as the clouds roll by.

Therefore, I am never in a weeknight time crunch…I have all day to roast a lamb and make bread from scratch. Heck, I even grind my own flour.

Truth is, it’s often 7 o’clock before I even THINK about what dinner could be. Sure, I ‘d like to say I make everything from scratch, but I don’t. Not even close. I resort to frozen meals on occasion. (okay, lots of occasions.) However, I want our food to be as fresh as possible, and TASTE good. If it’s quick, bring it on. Everyone needs help from time to time.

I was recently given the opportunity to let Bertolli help me out with my dinner dilemmas, and believe you me, I took it. I had been eager to try their new frozen soup line anyway, so when the offer popped up? Well, you know I said yes.

bertolli-soup-2The soup took only about 12 minutes to cook, from the moment I placed it in the pot. Really. Just enough time to throw some spinach and baby greens in a bowl with some parmesan croutons, cucumbers and cherry tomatoes. Just enough time leftover to quickly make a few grilled cheese sandwiches with fresh mozzarella on garlic toast. Yum.

I was really pleased with the soup, too. I chose the Roasted Chicken and Rotini Pasta version – it has huge chunks of vegetables in it – carrots, squash, celery – and the noodles stayed al dente. Lots of flavor, and so quick and easy! My challenge was to prepare everything in under an hour, but I managed in under 15.

I am always in a run.
