Chicken Change Up…Spinach and Almond Topped Chicken
You would think that after being surprised by the past two Chicken Change Up recipes being as easy and delicious as they were, I wouldn’t be quite as surprised this go round.
But apparently I have a low threshold for accepting things.
This week I was challenged to make Spinach and Almond Topped Chicken, using a combination of Hellmann’s, almonds, breadcrumbs, parmesan and spinach. It was just about the easiest chicken recipe I’ve ever attempted – no dredging, no coating, no eggy mess. No oil. Just great flavor, a nice crunch, and a way to sneak greens into dinner.
Dinner that was done in under half an hour, no less. Not kidding. In fact, I measured out the ingredients, and my four-year-old made it. Really. Yes, I did the placing of the chicken in the oven, but he did the rest. He loves to cook!
Just to prove it, I videoed it for you. Pretty impressive, don’t you think?
