Cinco de Mayo…Fresh Corn Pico
Cinco de Mayo.
Has nothing to do with mayonnaise, as some may have thought.
Without going in to some made up history of the holiday, I’ll give you the cheap and dirty details.
Cinco de Mayo, aka Cinco de Drinko, is the day every American pretends to be Mexican, eats a lot of tacos, and drinks as much tequila as humanly possible. They usually take an unexpected day off from work on Seis de Mayo. (Siesta de Mayo) I don’t know why they don’t expect it, as I can tell you right now, tequila is the devil. I learned that drinking margaritas for breakfast in Texas.
I won’t make that mistake a fourth time, I’ll tell you that right now.
Anyway, in honor of this trendy and popular holiday, I thought I’d throw you a little recipe for fresh corn pico de gallo. It’s almost too easy to qualify as a recipe, but I remember 5 years ago when I just assumed all salsa came from a jar in the grocery store, and had never considered making pico de gallo.
So maybe one of you readers is in the same boat I used to be in.
Fresh Corn Pico.
I adore pico de gallo, as it is about the freshest, most vibrant, and downright delectable chunkiness to ever top a tortilla. And it’s pretty, which works for me. Just chop a few ingredients, let it sit a few minutes, and voila – tastebud explosion.
Fresh Corn Pico de Gallo
- 1 can sweet corn
- 2 fresh tomatoes, diced
- 1 sweet onion, diced
- Juice of 1 lime
- pinch cayenne pepper
- salt and pepper, to taste
- 1/2 bunch fresh cilantro, chopped (more if desired, I like a lot)
Combine all ingredients in a mixing bowl; allow to rest in refrigerator for 20 minutes before serving with your favorite chips.
