One of the most successful posts here on Doughmesstic is for Jalapeno Poppers. Pinterest and StumbleUpon keep traffic rolling in here on a constant basis thanks to that post, and for very good reason – they are delicious. They are perfect as a party appetizer or as a tailgate staple – quite simply, it’s finger food at it’s finest. I have to give credit to Jon though – these are his recipe, and they’ve never failed to deliver on delicious.
So, when it came time to serve up another savory popover, it just made sense to give the ingredients in these poppers a try as a popover.
Oh my.
What could be an easier bread/side dish? Instead of rolls, or biscuits, or even cornbread, give these Bacon and Jalapeno Popovers a go. We paired them with scallops and grits, and I have to say, I adored them. They’d be just as good on their own as a simple lunch option.

Ingredients

- 3 tablespoons butter
- 4 large eggs
- 1 1/4 cup milk
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 cup finely diced jalapenos (about 3 jalapenos, seeded)
- 6 slices bacon, cooked and chopped
- For the filling
- 4 ounces softened cream cheese
- 1 teaspoons garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon Old Bay
- salt and pepper, to taste
Instructions
- Preheat oven to 375. Prepare a large, evenly prepare a 6 cup Popover Pan with the butter, or, a 12 cup Mini-Popover Pan. Place the pan in the oven for 3 minutes to melt the butter. Remove when melted. Spray each vessel with cooking spray to prevent any sticking.
- In a large bowl, beat the eggs with the milk. Add in the flour , salt and garlic powder, stir to combine. Fold in the jalapenos and bacon. Pour batter evenly into the popover pans. (I poured mine almost to the top of each vessel.)
- In a separate bowl, combine the filling ingredients thoroughly. Add spoonfuls to each of the popover vessels.
- Bake at 375 for 10 minutes, then reduce heat to 350. Return to oven for 25 minutes, or until all are puffed and golden brown.
- Remove from oven, serve and enjoy!

Is it just me, or does step 1 seem really confusing? What happens to the butter after it gets melted? Does it get incorporated into the dough mixture?
The butter goes into each of the muffin or popover cups. That’s all. Then you add the batter. Hope that helps!
