I don’t think I even like peanut butter…
Is it possible? I was roaming around the house today, cloroxing as per usual and vacuuming, when it hit me. (not the vacuum, silly, this thought) I don’t think I really like peanut butter. I have eaten it all my life, and to say that kinda feels weird. If asked yesterday, I would have said, I love Reese’s! I love PB & J! I love Peanut Butter Pie! But DO I? Maybe not. I was searching my foodies blogs in search of something to make today when I ran across an AMAZING brownie recipe that has peanut butter cheesecake filling. And I was super excited to make it…really, I was! But then I imagined the taste…and, well, I don’t know what happened. The peanut butter aspect just knocked me off course. Maybe I will rethink making them again tomorrow. Maybe TOMORROW I will again like peanut butter. And, speaking of peanut butter, here is a look at the first ever from scratch peanut butter cookies I made this week. Dad loved them. He, lucky he, loves peanut butter. Me? Well, I had a bite and gave the rest away. See? I didn’t like peanut butter THAT day, either. Uh oh. Here is the recipe anyway…

Best Peanut Butter Cookies Ever
1 cup creamy peanut butter
1 cup creamy peanut butter
1 cup sugar
1 egg
3/4 tsp vanilla
1 tsp baking soda
pinch of salt
Stir together sugar and peanut butter until well mixed. Beat in egg, vanilla, baking soda and salt. Put dough into the fridge for 15 minutes.
Preheat oven to 350. Form dough into 2 inch balls and use a fork to spread the cookies and make criss-cross pattern on the top. Bake for 10 minutes, remove and allow to cool on baking sheet for 5 minutes. Transfer cookies to rack to cool completely.
