Quick, Easy, Delicious…Stuffed Peppers

Admidst the onslaught of emails to answer, pictures to upload, and a new blog to attend to thanks to Operation Baking GALS, I was able to feed the fam dinner, believe it or not. This was so easy…

run to the garden, pick 6 peppers
grab 3 large green onions and a few baby carrots while I’m there
snip some of those chives and oregano
run back to the house, defrost that pound of beef I so thoughtfully re-packaged into one pound bags after buying it on sale in a huge pack
open a can of corn
throw some rice together in a pot with some spices…
brown the beef with some butter and worchestershire and cilantro, red pepper and salt
sprinkle in a cup of shredded cheese – jack is a great choice

then…

combine it all and stuff it in those peppers.
Wrap each one in foil. Send husband to the grill and get back to the computer. What could be easier than that?

Um, dessert. Dessert was easier than that.

Take last peaches from the peach tree, sprinkle with white and brown sugar, a squirt of lemon juice, and wrap in some refrigerated Dorie Pie crust. Pop it in the oven at 350 until bubbly then cover in Vanilla bean ice cream. So simple and yet SO GOOD. Seven loved it. What doesn’t he love? He even had the stuffed peppers but we mixed it in with his Gerber Rice. He just couldn’t get enough of it!

So, if you’re ever in need of a quick, easy and cheap meal – this is it! We had enough for dinner, and enough leftovers for 2 more days of lunch. Because we had so many of the ingredients in our garden, the cost per stuffed pepper ended up costing us around 75 cents.
