Strawberry Coconut Rum Punch
I’m not sure if you like coconut as much as I do, because that would actually be a hard thing to achieve.
I’m a coconut nut.
Coconut pie. Coconut cake. Toasted coconut. I want it. Crave it. Need it.
And now, there is Captain Morgan’s Coconut Rum.
And they say good things don’t happen to bad people.
Ha! I showed them.
As part of my ever-so-taxing Food Blogger Job, I get asked to do things that are just plain awful. Take, for example, having Captain Morgan’s email me, asking if I could possibly create a Rum Punch using their new Coconut Rum. It is a true struggle some days, y’all. I’m not sure how I even get out of bed in the morning.
But, I accepted their challenge, and set about to tinkering in the kitchen, sipping on that crazy good rum (seriously, so coconutty it should be outlawed), and mixing up concoctions I thought would be worthy. Of course,, my mind first went to pineapple, but…that’s a might bit overdone. Delicious? Yes, of course. But I wanted to be different.
Strawberry. One I mixed this rum with strawberry simple syrup, I knew I’d create the exact rum punch everyone needs. So easy, so packed full of flavor. A bit of 7-Up, a squirt of lime juice, the strawberry syrup, and the coconut rum?
You’re done. Call it a summer.
Strawberry Coconut Rum Punch
makes 6
Ingredients
- 9 ounces Captain Morgan’s Coconut Rum
- 1/2 cup Strawberry Simple Syrup
- 12 ounces 7-Up
- 2 teaspoon lime juice
- Ice
Instructions
Pour all ingredients into punch bowl. Stir. Serve over ice.
Note – To Make Strawberry Simple Syrup, blend 1 cup water and 4 cups strawberries. Once blended, heat over medium low heat. Strain through cheesecloth, squeezing juice back into saucepot. add 1 cup sugar, return to medium low heat, and stir until sugar is dissolved. Use as desired.
Hopefully, the fine folks over at Captain Morgan’s will decide they are big fans of my punch, as if they are, I could win a little trip! That’s right…they are voting via secret ballot, and I could win two tickets to the Firefly music festival. I rarely win things. So keep your fingers crossed, will ya?
