Tuesdays With Dorie…Linzer Sablés

Cookies.
These are fancy. They are pretty. They are pretty tasty.
They are hard. As in, crunchy. Not as in difficult. I personally don’t care for crunchy cookies, but these were good. Not my favorite, but I can see them being nice as a gift. I also don’t see myself sitting around someday saying, Man, if only I had a plate of Linzer Sablés…and then get up and go about making them. That’s just me. I’d rather have a chocolate chip cookie or brownie.
They were fairly easy to prepare – I just hate using up so many nuts! (I am stingy with the nuts, people. I don’t know why…it just hurts my feelings to use a whole bunch of them in ONE thing.) So to ease my anxiety, I used almonds, hazelnuts and macadamia nuts. For the filling, I doubled up as Dorie mentioned in the Playing Around notes – I used Amish Red Raspberry jam and Chocolate Ganache. It really was pretty yummy.
Better than yummy, in my world, is photogenics. These cookies are hella prettier than a Twofer Pie. Thank goodness for that.
