This week’s country of choice is Ireland, chosen by Michelle from My Year to Get Skinny.
Yes, I have been to Ireland. I don’t have pictures, as I was still using a regular old film camera back in 2003. I guess I could have scanned some of our pics, but I didn’t. Imagine Green. And Old. And rolling hills and stone walls. Tiny roads (seriously, Irish People, why so narrow??) and always a tractor going treacherously slow. Roundabouts headed in the wrong direction. Cold seas pounding a rocky surf. Long forgotten summer boats riding the waves through the winter. Cemetaries that should be works of art.
That is Ireland.
We spent about a week there, holed up in a gorgeous resort in the country about an hour from Dublin. We spent our days in the tiny rental car, trolling through the countryside. We saw waterfalls and castles, headstones and crystal. We ate lunch in pubs with bubbly glass windows. We held hands on the cobblestone streets of Dublin.
For my meal, I decided on Irish Chicken and Dumplings. What’s Irish about it, you ask? Well, it has potatoes in it, of course. I found a recipe or two for it to base my recipe, but here is what I did using what I had in the pantry….
Irish Chicken & Dumplings
1 large can Cream of Chicken Soup
4 Boneless Chicken Breasts, cut up
1 bag frozen peas & carrot mix
1/2 large sweet onion, chopped
6 medium potatoes, peeled and chopped
2 cans crescent roll dough, butter flavor
1 stick butter
salt & pepper to taste
other seasonings, to taste
Boil chicken and onion until tender, about 30 minutes. Add cream of chicken and butter, seasonings and potatoes. Reduce heat to low-medium and cook for 20-30 minutes Add peas & carrots, continue to cook for 10 minutes, then add crents rolls, torn into medium to large pieces and cook until dough is cooked through.
We all thought this was a really good recipe for Chicken Dumplings, and really an easy meal to throw together using what items you might have on hand. The potaotes made for a nice addition, and Iknow I will make this again…soon!
