Biscotti Caramel Popcorn Mix…and a Le Creuset Giveaway {CLOSED}

I love caramel popcorn. I’m sorry, but people who don’t get the sweet/salty combination?

They. Are. Wrong.

Nothing is better than the pairing of some overly salty concoction with a sweet, over the top confection. French fries and ice cream. Chocolate and sea salt. Caramel and popcorn. It just makes sense.

As does this mix of goodies I’ve compiled here. I call it trail mix, though I doubt any health food trail hiker would consider it that. It candy. It’s popcorn. Caramel. Cookies. it’s insanity. Insane Trail Mix? I don’t know. Call it what you want, but for labeling purposes only, I will dub it Biscotti Caramel Popcorn Mix.

You will call it delicious.

Biscotti Caramel Popcorn Mix

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 10 Servings

Ingredients

1/2 cup Yellow Popcorn Kernels
3 tablespoons Vegetable Oil
3/4 cup packed brown sugar
6 tablespoons butter
3 tablespoons light corn syrup
1/4 teaspoon salt
3 tablespoons Hazelnut Biscotti Powdered Creamer
1 teaspoon vanilla extract
1/2 cup crushed Biscoff cookies
1 Cup M&Ms;
1 cup nuts (I used almonds)
1 cup White Chocolate Candy Corn M&Ms;
1/2 cup large coconut flakes
1/2 cup Chocolate Covered Sunflower Seeds
1/2 cup dried cherries

Instructions

Preheat oven to 250. Prepare a baking sheet with parchment or a Sil-Pat. Set aside.
In a large, heavy bottomed bottomed pot, heat oil. Add one kernel of popcorn to the oil and cover with lid. When it pops, add the remaining popcorn to the hot oil and shake the pot vigorously until the popping stops. Remove from heat, then remove the unpopped kernels.
In a separate saucepan, combine sugar, butter, corn syrup, salt and creamer until boiling. Continue to boil for about 5 minutes. Remove from heat and stir in vanilla.
Spread the popcorn onto the prepared baking sheet. Pour mixture over the popcorn, then sprinkle with the crushed cookies. Stir gently to cover the popcorn evenly. Place in oven for 10 minutes, stir, then bake an additional 10 minutes. Remove and allow to cool.
Combine the prepared popcorn with the remaining ingredients. Enjoy!
