sevengardenI was asked by Kraft and Philadelphia Cream Cheese to create a recipe for their Seasonally Fresh with Philadelphia Program, and being the Philly lover that I am, I couldn’t possibly say no…I already knew exactly what to make!

This is the perfect time of year for such amazing flavors, as gardens are starting to really produce some great veggies – and even if you haven’t got a garden, the Farmer’s Market is teeming with some of the best there is. Paired with buttery filo dough and Philadelphia Jalapeno Cream Cheese (oh yeah!), expect a kick to go along with those summer flavors. It’s a match made in heaven! So get out there and experiment with what there is to be had – you won’t be sorry!

These spicy bites of deliciousness are an excellent choice for the 4th and any of the 372 potlucks you’ve been invited to. They are a snap to prepare, easy to transport, and you are guaranteed to leave with an empty platter. Heck, maybe the hostess will even wash that platter for you, and you’ll have nothing to do but put it back in the cabinet when you get home.

Spicy Corn & Tomato Jalapeno Bites

makes 30

Ingredients

  • 30 Mini Filo Dough Cups, baked as directed
  • 1 – 8 ounce container Philadelphia Spicy Jalapeno Cream Cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt & pepper, to taste
  • 1/2 pound ground beef, cooked
  • 2 ripe tomatoes, diced
  • 1 ear of corn, cooked and removed from cob
  • 1 white onion, finely diced
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Combine Philadelphia Spicy Jalapeno Cream Cheese with the garlic powder, onion powder, salt and pepper. Stir until smooth.
  2. Fill each filo cup with a spoonful of the cream cheese mix. Top with prepared ground beef. Sprinkle each cup with remaining ingredients. Serve and enjoy!
