Comfort Food Round Up

No joke, as I write this, my child has been absent from school due to weather since February 13.  They went late that day, and not ONE MINUTE SINCE.

I love my son, don’t get me wrong.  But holy french words, I can not take it any.more. I can’t be expected to raise my child MYSELF.  He needs his teacher, a sweet, young, not yet jaded by the cruel cruel world teacher to instill in him the tools to master his domain.

I can master YouTube and Google, but that’s about my limits.

School needs to happen, and soon.

I curse myself for saying (a mere three weeks ago) that it was a bit disappointing that we were into February and hadn’t had a nice snow.  Several people nodded and agrees, that yes, a clean white snow for a few days would be lovely.

A clean white 2 feet of snow, now two weeks old and mounting, pushed into high brown piles full of gravel and self loathing is not exactly what ANY of us had in mind.

So we eat comfort foods.

Casseroles and stews, carb loaded decadence and biscuits, foods dripping in sauce and calories and goodness.  I thought I might as well just round up a few of them for you here, just in case you, too, are still snowed in.  And hey, even if you’re not – watch it…there’s still March to go.

Beware.

Slow Cooker Cowboy Beans…so warm and spicy, and super easy.  Chips, anyone?

Creamy Wild Mushroom and Sage Soup

Creamy Wild Mushroom and Sage Soup…sounds so warm and belly coating, right?

Slow Cooker Beer Braised Pork Roast

Slow Cooker Beer Braised Pork Roast…look at that.  Just look. Dive in.

Spicy Mac and Cheese

Spicy Mac & Cheese.  Spicy. Mac. and Cheese.  Oh, please.  Please.

Which to make first??

What are you doing to keep your sanity during this crazy winter?  Making anything amazing?  DO tell!
