Roasted Potato Salad with Tomatoes & Basil
Not every dish must be a Main Dish.
But…every dish should be a Great Dish.
I was contacted by Reser’s to create a potato salad recipe…and this was the result! Roasted Potato Salad with Tomatoes & Basil is so fresh and flavorful, it would be the perfect side to chicken, pork, or beef. The addition of the garden tomatoes offers a real kick that counterbalances the starchy potatoes, and the herbs? Well, any time you can use fresh herbs you really should – what a treat!
Our garden has been teeming with the most wonderful herbs this year, thanks in part to the milder winter we had. In this dish we used some really ripe Romas…if only THEY were out of the garden too. Soon! But, you could easily use any red tomato that you have. I don’t really recommend acheaper store bought tomato here…they just aren’t as flavorful. If you must, though…try Hot House or Vine Ripe. More than anything, Enjoy!
Roasted Potato Salad with Tomatoes & Basil
Ingredients

2 1/2 pounds redskin potatoes, thick sliced

1 1/2 cups fresh tomatoes, chopped

1/2 cup fresh basil, chiffonade

3 tablespoons wet minced garlic

2 tablespoons extra virgin olive oil

3 tablespoons melted butter
-
1 teaspoon minced onion

2 tablespoons fresh rosemary, chopped

Salt & Pepper, to taste (add just before serving)
Instructions

Preheat oven to 400F. Prepare large baking dish with cooking spray. Set aside.

In large mixing bowl, toss all ingredients together until evenly coated. Bake for 20-30 minutes, turning every 10 minutes. Remove when the potatoes are evenly tender. Season with salt and pepper.

Chill in refrigerator until ready to eat. Serve and enjoy!

We can’t wait to see what people will whip up this year.” Werner adds, “We’re also inviting contestants to submit a photo and share any fun or interesting stories behind their recipe. We’d love to know if it has been a closely guarded family secret that’s been handed down for generations or maybe it’s an entirely new take on a classic side dish.”
