Grilled Chicken & Strawberry Salad

Yes, friends…I am posting yet another salad. On MY blog. This time, a Grilled Chicken and Strawberry Bacon Salad. I had to, you see. My life is changing.

You may not be aware of this, but towards the end of the summer, I went on a diet.

Oh lord…the dreaded D word.

But you see, I saw pictures of myself from this winter, when apparently I felt the need to prepare for some type of strange hibernation, as if we would possibly be facing drought, or famine, or the zombie apocalypse, and I needed to carb load for the future.

What I did was eat all the things. All. The. Things. I got fat. Fatter.

So in March, I joined a gym. I went, I liked it. Two days a week, I did my thing. And then I started going more and more. And then I found a training partner who pushes me, makes me want to succeed. And so…we started working out over an hour a day, six days a week.

And…I went on a diet. A low carb (practically NO CARB, waaaa) diet.

;This is hard for me, y’all. I adore cake. And pasta. And bread. And cake.

But I also found that I adored the Strawberry Fields Salad from Wendy’s. In fact, I got a bit addicted to it. Leafy greens, grilled chicken, fresh strawberries, a little bacon, and an apple vinaigrette. Wendy’s served it with blue cheese and onions, but those aren’t my cup of tea, so I always ordered it without those.

I loved that salad.

And then they look it away.

TOOK IT AWAY.

Luckily, I am capable of creating a salad as simple as this, but maybe you never really thought making it yourself, and you also fell in love with that salad. So here you are. You, too, can make it yourself.

Grilled Chicken & Strawberry Salad

Makes 2 salads

Ingredients

  • 2 grilled chicken breasts, chopped into bite sized pieces
  • 3 cups mixed field greens
  • 6 large strawberries, sliced
  • 4 pieces pre-cooked bacon, chopped
  • Apple Vinaigrette

Instructions

Combine greens, berries, and bacon into two serving bowls. Top with grilled chicken. Drizzle with Apple Vinaigrette, as desired.

To make the Apple Vinaigrette:

  • 3 tablespoons apple juice
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • 1/3 cup extra-virgin olive oil (lemon infused olive oil also works well)
  • salt and pepper, to taste

Pour the apple juice and vinegar in a small bowl, whisk in and olive oil. Season with salt and pepper, as desired. Serve immediately.
