Caribbean Snowfall Cocktail? What am I even saying? Caribbean Snowfall?

Well, let me tell you why I am posting this tropical concoction – a taste of the warmth and sunshine, but with a chilly sounding name. I have my reasons, I do.

It’s cold out, isn’t it? Very, very cold. I’m not sure what happened, but in the course of a week, it went from 60’s here to 20’s. Like, in a heartbeat.

That stings.

It stings especially hard because just last month, I was sitting on a beach in the Cayman Islands, belly full of jerk chicken, sipping a tropical cocktail. I’d just been swimming with giant stingrays, snorkeling in pristine waters, and enjoying the sun and surf on my Princess Cruise excursion from the Caribbean Princess.

It had been an amazing day.

The stingrays? Scary. Truth. I was a little hesitant at first to even book my excursion to swim with stingrays, but I took control of my nerves and stepped up to the challenge. I mean, how often do you really get the chance to visit a sandbar and touch such exotic creatures? Not often. But thankfully, my friends at Princess made it possible for me to have this opportunity, so I put on my swimsuit, packed my day bag, and boarded the catamaran.

When we got to the stingrays, everyone on our boat dropped one by one into the fish infested waters, and i…I choked. I sat on the deck for 10-15 minutes, just taking it in, trying to convince myself that no one down there was screaming, no one was dying. I COULD get in the water.

So I did.

IMG_7668I’m so glad I did. The massive creatures were so used to human interaction that they swam right up to us, unafraid, and hugged out legs, skirted our arms and backs. They were soft, and strong…it was amazing.

After our time in the water, we spent some time nearby snorkeling. I’m not a huge fan of having my face in the water, but I did see some gorgeous plant life and colorful fish before heading back to the boat to wait for the rest of my group. The sun was warm and inviting – I was totally relaxed – which is so unlike me!

Our next stop was lunch, on a quiet beach. A quiet beach.

Quiet.

I’m so not used to that.

So a drink, a suntan, a full belly on a quiet beach? – these are luxuries, folks. And this drink? This drink takes me back there. A combination of sun and snow, the memories of a sunny cruise with the chill of today.

Maybe it will take you somewhere good, too.

Caribbean Snowfall

makes 2

Ingredients

  • 4 ounces fresh orange juice
  • 2 ounces pineapple juice
  • 4 ounces Rum
  • 2 drops Sriracha
  • 8 ounces Ginger Beer
  • 2 glasses, rimmed in coconut flake, full of ice

Instructions

Combine orange juice, pineapple juice, rum and sriracha in a cocktail shaker. Shake to combine. Pour into two prepared glasses, top with ginger beer. Garnish as desired.
