Pork Barbeque Quesadillas

I was contacted by Old El Paso to create a few recipes, and this one? Well, I just love it.
Pork Barbeque is always popular at our parties, and to prepare it in an untraditional manner – such as in a quesadilla – makes it all the more popular. Sure, you could always throw it on a bun, as per usual, but why? These quesadillas are JUST different enough, and take advantage of all the best veggies available from your local farmers market, so pick the best produce for the very best results…you’ll be rewarded with lots of applause!
Pork Barbeque Quesadillas

Ingredients
- 1 package Old El Paso 8 count Burrito Flour Tortillas
- 1 pound prepared pork barbeque, chopped
- 1 tomato, diced
- 1/2 sweet onion, diced
- 1 cup Mexican Blend grated cheese
- 1 cup prepared cole slaw
- ¼ cup chopped fresh cilantro, packed
- Salt & pepper, to taste
Instructions
- Preheat oven to 350.
- Place four tortillas on a baking sheet. Top with pork, tomato, onion, and cheese.
- Place a tortilla shell on top of each prepared quesadilla.
- Bake for 5 minutes, or until cheese is slightly melted. Remove from oven. Remove the top tortilla from each quesadilla and top with coleslaw and cilantro. Replace the tortilla.
- Press quesadilla with a spatula or hands to flatten. Cut into pie shaped wedges. Serve immediately.
Notes
Tip: Quesadillas can easily be made using a Panini press or specialty quesadilla maker. If you have one, use it! Also, wedges of quesadillas make excellent appetizers for any party – just make them and keep them warm in the oven until needed. They are always a crowd pleaser!
