Easy Buffalo Chicken Salad

This recipe name may have you thinking it’s going to be complicated.  Having to make a sauce, and cook, and chop, and well, spend time in a kitchen.

But that’s where you are wrong.

This salad couldn’t be simpler, thanks to Al Fresco, a company that asked me if I’d like to test out a few of their products to see what I thought.

I thought good stuff.

You may or may not know it, but for nearly a year now, I have been trying my best to stick to a low to no carb diet.  It’s certainly not easy, and I do find myself sometimes falling off the wagon, but when I do, and I gain a little weight, I know what to do and how to remedy it.  I go back to drinking lots of water, watching those carbs, and the pounds fall back off, thank goodness.

This salad, in particular, fits right in with my new lifestyle.

I wasn’t sure what to expect from the Buffalo Chicken Grillers…what would it taste like?  Could it really be edible?  It’s ground and flavored chicken,frozen and ready to cook, so, is it going to be mealy?

As it turns out, it’s pretty darned delicious.  In fact, the patties that I didn’t eat in the salad, I simply cut up and enjoyed on their own, knife and fork being my only side dishes.  I’m kind of craving them now if you want to know the truth.  Dipped in ranch dressing? Good stuff.

But…the salad is even better.  I chopped up a few of the burger patties, placed them on a bed of fresh greens (I like arugula for the peppery spice and spinach to round it out), some tomatoes, and then a good drizzle of ranch dressing.  If you like added crunch, the addition of chopped celery pushes this salad into a higher plane…I think you’ll adore it as much as I do.

Easy Buffalo Chicken Salad

makes 4 salads

Ingredients

  • 4 Al Fresco Buffalo Chicken Grillers, cooked per instructions
  • 4 cups fresh greens
  • 2 tomatoes, cut up
  • 1/4 cup fresh chopped cilantro
  • 1/2 cup diced celery
  • Ranch Dressing, to taste

Instructions

Cut Chicken Grillers into bit sized pieces and distribute over 4 bowls of greens.  Add tomatoes, cilantro, and dressing.  Serve and enjoy!
