The Wine Bar…Dark Chocolate and Riesling Truffles
I’ve recently become a wine drinker.
My pocketbook need not worry – I’m not interested in those pricy bottles of vintage wine. As long as it tastes good, I’ll drink it. Right now, Moscato is my favorite (though ice wines have me drooling), but I am broadening my horizons into other sweet wines as well.
I was recently approached by my friends at The Wine Bar to test a few of their varieties, maybe make a recipe with one, and then tell all of my friends (that’d be you!) what I thought.
Of course, I said yes. Free wine? Say no more.
So a week or two later, 3 bottles of wine showed up at my door. It took some restraint, not drinking them all versus making a recipe with one. But I managed!
I’ve been wanting to make truffles for weeks now – nay, months? – and this little project seemed like the prime time to experiment.
Can I just tell you…these are delicious?
I used some really great ScharffenBerger dark chocolate, and paired it with the Riesling. The two went so well together! The bit of peachy sweetness from the Riesling added a nice contrast to the darkness of the chocolate…and wow – they were SO easy to make! (And don’t they look pretty??)

Dark Chocolate and Riesling Truffles
makes 24-28
Ingredients
- 1/4 cup Snap Dragon Riesling
- 8 ounces Dark Chocolate
- 1/4 cup heavy cream
- 1/4 cup Sweetened Cocoa Powder
Instructions
- In a small sauce pan, reduce wine over medium low heat by half. Add chocolate and cream, and reduce heat to low. Stir constantly, careful not to overheat. When chocolate is melted and smooth, remove from heat and set aside until mixture reaches room temperature.
- Using a teaspoon or small spring loaded scoop, portion out chocolate and roll into small balls, a bit larger than a cherry. Coat in cocoa powder by rolling truffle in powder. Repeat with remaining chocolate until all truffles have been made. Keep stored in sir tight container.

Let me tell you what I had…
Cherry On Top Sweet White Wine – very sweet, fruity – tastes like what you imagine summer to taste like. Yes, really.
Butterfly Kiss Moscato – I do love a Moscato, and this one is so nice! I love that it’s a little bubbly…yum.
and the Snap Dragon Riesling I used in these truffles. It’s peachy, light, crisp – if you are eating something spicy, this is a great wine to have with it.
