I saw this recipe for the Parrot Bay Coconut Shrimp at recipezaar.com the other day and knew I wanted to try it, mostly because we LOVE the pina colada dip. True to the original, this recipe rocks in the dip department. excellent. If we owned a deep fryer this recipe would have been better, as with an electric stove it is a bit difficult to keep a constant temp, but the shrimp still turned out well. I served the shrimp with the dip, a veggie rice, and hush puppies. Not bad for a night in. This morning I made more cookies for the bake sale – this time peanut butter. Jon said they were good but seeing as how I still don’t like peanut butter, I didn’t bother tasting them. But here they are. What to make tomorrow?? We’ll just have to see, but I imagine Blueberry Cream Cheese Muffins. Sounds good, huh?
