Breakfast for Dessert…Cereal Ice Cream
I know you are thinking I’ve lost my mind.
It’s okay. I probably have, but it isn’t because of this ice cream.
As you may or may not be aware, I just finished up a huge project: my Ice Cream Cookbook. yep! 300 Frozen Desserts, ranging from gelato to granita, sorbet to Baked Alaska. There’s even a Vegan chapter, a Sugar Free Chapter, and then the most fun…Fanciful Ice Cream Flavors. This recipe for Cereal Ice Cream is featured there, and I thought I’d give you a sneak peek.
I was actually inspired by a trip I took to New York City last January, when I visited Momofuku with my blogger friends Jenny from Picky Palate, Maria from Two Peas and Their Pod, Lori from Recipe Girl, Maggie of Three Many Cooks, and Amanda of Kevin and Amanda. One of us in the group ordered their Cornflake Ice Cream. It was, for lack of a better word – different. It tasted JUST LIKE CEREAL. So why not recreate it? use my own favorite cereal (Honey Smacks!), and see what happens? Well…GOOD STUFF HAPPENS! And while it may not be ranked up there with the likes of Strawberry Cheesecake Gelato, it is definitely a cool trick to have in your bag. Kids will absolutely LOVE it!
Breakfast Cereal Ice Cream
Yield:1 Quart
- 1 cup heavy cream
- 1 ½ cups favorite breakfast cereal
- 1 1/2 cups half and half
- 1/2 cup sugar
- pinch salt
Bring heavy cream to a boil then pour over cereal. Stir and allow to sit for 1 hour. Strain over large bowl and discard cereal.
Add half and half, sugar and salt. Stir and refrigerate until cold.
Add to ice cream maker and follow manufacturer’s instructions for freezing.
