Chili Infused Bacon Wrapped Scallops
Scallops.
Huge, white, tender. Not much you need to do to a scallop to make it amazing, as long as you are starting with great quality product.
Of course, bacon has never met a scallop it couldn’t make better.
Place a few succulent sea scallops on a skewer with a fatty piece of smoked bacon? You’ve got yourself some seriously great dinner. Or, appetizers, if you’re in the mood. I could always make a meal out of finger foods…couldn’t you? Something fun about the bite-sized goodness of it all. Not having a plate is good too – no one can really tell how many you have eaten, and therefore, not as many calories count.
At least that’s my theory.
Incredibly easy to throw together, bacon wrapped scallops can be prepared and cooked in less than 20 minutes. Really. This makes them ideal for a quick dinner or get-together…perhaps the upcoming NFL Draft?
You didn’t know that’s tomorrow, did you? That’s because based on Google’s best guess of my blog demographics, you are a female, you are aged 25-45, and you’ve no idea what a screen pass is or how many points are awarded for a touchback.
I bet your man knows.
The draft starts tomorrow night, and Andrew Luck, the quarterback of the moment is slated to go first. No one knows for sure, of course, but, that’s the best guess. And, if he does, he’s going to the Colts.
Which brings me unwillingly to Poor Peyton Manning. I hope he puts a hurt on all the naysayers next year. Of course, then we have to talk Tebow, and Jesus, and what the football gods have in mind for that faceoff.
I think I’d rather talk about scallops. Too many cute boys with all that padding get me riled up.
Just make the scallops. Watch Grey’s Anatomy instead. McDreamy and McSteamy…mmmm.

Chili Infused Bacon Wrapped Scallops

Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 6 servings (as a meal)
Serving Size: 4 scallops
Ingredients
24 large sea scallops
12 slices bacon, halved (24 6-inch pieces)
2 tablespoons olive oil
pinch chili powder (or to taste)
pinch garlic powder
Instructions
Preheat oven broiler to 500. Place rack near the top of the oven.
Rinse and pat dry each scallop. Wrap each in a piece of bacon. Skewer with a toothpick or place 4 wrapped scallops onto a skewer.
In a small bowl, combine olive oil and seasonings.
When all scallops are wrapped and on rimmed baking sheet, brush with the seasoned olive oil.
Place under broiler for 7 minutes, flip, and bake another 7 minutes.
Serve and enjoy!
Notes
Watch the scallops closely in the oven. If too close to the broiler, the bacon drippings may smoke. If this should happen, lower your oven rack or simply move the scallops to a lower rack.
As you can see, the scallops I used were big, beautiful sea scallops. What you may not know is that I live inland. As in, no way am I getting quality fresh seafood.
Or so you might think.
