Two of my favorite things?
Breakfast and dessert.
If you think about it, breakfast foods are really pretty dessert-like anyway…pancakes, muffins, Danishes, croissants, French toast…they’re all sweet and disguised as a nutritious breakfast.
Breakfast is smart, kids.
For my March contribution to the world of Krusteaz, I decided to just be forthright and admit – this breakfast IS dessert.
I don’t care WHEN you eat them…eat them for breakfast or for brunch or for an after school snack or for dessert. Just eat them. They’re surprisingly easy, thanks to the ease of using the Krusteaz pancake mix (only add water! Yes!) and the apple pie filling just comes together in no time flat. Heck, you can be making the filling in the same amount of time it takes for you to make that stack of pancakes.

Cinnamon Apple Pie Pancakes
Prep Time: 10 minutes
Total Time: 20 minutes
Servings: 4-5 large pancakes
2 cups Krusteaz Buttermilk Pancake Mix
2/3 cup water
2/3 cup apple juice
1 teaspoon cinnamon
1 teaspoon brown sugar
1 teaspoon vanilla extract

Now, you know I love new and unusual things…especially in the kitchen. And recently, though I do have an amazing waffle iron from KitchenAid that makes two waffles at once (hello!!), I found myself shopping for another, smaller, different waffle maker. That’s when I stumbled across this funky machine on Amazon. A BUBBLE WAFFLE MAKER. Or is it Pancake Maker? Either way, it is so incredibly cool. The consistency is more pancake in texture, as you don’t get the crunchy bite you often find in waffles. It makes the pancake/waffle so light and airy and just…well, perfect. And it’s easy and non-stick! Plus, you can roll the pancake up in all of it’s bubbly-ness for a gorgeous presentation.
