Brown Butter Chocolate Chunk Cookies, for #SummerDessertWeek

Hello there!  Hopefully you’ve already checked out my recipe from Monday, where I helped kick off the big blog event called #SummerDessertWeek.  I made a Key Lime and Coconut Pie that I am still sad is gone.  It was so good!  If you haven’t taken a peek – go now!  (well, AFTER you read about these cookies!)

As for the cookies – yessss.  Brown Butter Chocolate Chunk Cookies.  I have made it a passion to perfect the chocolate chip cookie, and according to local samplers, I am pretty darned good at this quest.  My biggest secrets?  One is to underbake them just a bit.  The second?  Take the time to brown your butter.  You won’t be sorry – it makes the dough so rich, so…just so much extra.

If you can, do take the time to prep the dough the day before you want to bake it.  While I do bake a few straight out of the mixer, and they are silly delicious, waiting a day to let the dough chill in the refrigerator is worth the wait.  The flavors really meld together, and make an incredible cookie even better.

Brown Butter Chocolate Chunk Cookies

Brown Butter Chocolate Chunk Cookies

By taking the time to brown the butter, these cookies go from incredible to perfection! Try mixing up the types of chocolate, add walnuts, or just keep them as-is!

Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes

Ingredients

  • 1 cup salted butter
  • 1 cup light brown sugar
  • 1/2 cup plus 1 Tbsp sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 2 cups plus 2 Tbsps All Purpose Flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups dark chocolate chips
  • 1 cup milk chocolate chunks (I used a chopped candy bar)
  • Maldon or sea salt flakes, to top

Instructions

  1. In a medium stock pot, brown the butter over medium heat. You will begin to see little bits of brown, continue stirring so as not to burn the butter. Once browned, remove from heat.
  2. In the bowl of a stand mixer, pour the brown butter, add the sugars and mix thoroughly, getting out the lumps until smooth.
  3. Chill the dough until no longer hot, about 10 minutes in the refrigerator. Add egg and yolk, stirring to combine. Add vanilla and stir.
  4. Gingerly fold in the flour, baking soda and salt until just combined. Do not over mix.
  5. Add the chocolate chips and chunks, taking care to make sure dough is not too warm to melt the chocolate.
  6. Wrap dough tightly, and place in refrigerator for 4 hours or more, or, opt to freeze dough for later use.
  7. When ready to bake, preheat oven to 325. Place cookie dough in mounded balls onto baking sheets lined with a silpat or cooking spray. Sprinkle with salt flakes.
  8. Bake until edges start to brown and cookies start to look set, about 10-12 minutes. Remove from oven and allow to cool on baking sheet. Serve warm.

Notes

Allowing the dough to chill overnight makes for a richer, better cookie. The dough also freezes very well!
